Chicken Tortilla Casserole

My family liked this. I made it with an extra can of cream of chicken soup instead of the milk because I was afraid it would be too soupy per other reviews. Next time I will use the milk as it was a bit too salty. I cooked the chicken with taco seasoning as per other reviews, which also contributed to the saltiness. I will also try home-made taco seasoning next time, with less salt. I only let this sit for an hour before baking and the tortillas soaked up the liquid and swelled up for a nice enchilida casserole consistency. Very easy to make. Later: Just had this for lunch at work. Even better the next day!

I thought these were very good and my 8 year old son loved them (he kept eating the filling while I was stuffing the skins). My husband thought they were OK and my picky 9 year old daughter would't eat them. But they're not tuna lovers so that is not a surprise. If you do like tuna, you'll love these. Thanks for the great idea.

Box cake mix, minus the box

This was GREAT. The recipe was also very forgiving as I ran out of sugar. I had 3 1/2 cups sugar, two boxes of strawberry jello (my son wants strawberry cake for his birthday) and the rest brown sugar. I made it last week so baking today would be easy. I added 1/2 cup slightly pureed frozen strawberries to each batch. Turned out great! I will definitely be using this again.

Breakfast Sausage

I love this! I recently got a grinder for my KA and tried this when I found 'Pork Cushions' on sale for $1.37/lb. Low fat (I trimmed), lower sodium than store bought, and delicious. I ran out of sage and used 1 tsp. sage and 1 tsp. poultry seasoning and substituted allspice for cloves because that is what I had. I also made it with ground chicken thighs. Very good! Will definitely be making this on a regular basis. I have 35 little patties freezing in my freezer right now.

Cheryl's Spinach Cheesy Pasta Casserole

This was pretty good and very easy. To those of you who left out the egg, it is essential for thickening the dish and giving it a lasagna flavor and feel. I used extra virgin olive oil for extra flavor. I added italian herbs and basil to the bread crumbs and will probably add some garlic to the spinach next time as that sounds like a good suggestion. As for complaints about it being bland perhaps that has something to do with the choice of pasta sauce. I liked it and my kids ate it. Even my picky son who was begging for chicken nuggets as I served this up, forgot about them after he finally consented to taste it.

Cranberry Macadamia Nut Bark

YUUMMM! And sooo easy. I used white chocolate chips and salted cashews. I wasn't sure how much 3 1/2 ounces was so I added about 1/2 cup - same as the cranberres. A few more cashews would be good. My problem now: Staying out of it until my geusts arrive tonight.

Four Seasons Enchiladas

I did an ingredient search for turkey and cream cheese because I had to use them up before they went bad and this came up. These were really good. I only used half of the cumin because I was afraid my kids wouldn't like it and I used cheddar instead of monterey jack because that is what I had. I'm not sure what chili beans are, I used black beans and a mild salsa, again because of kids. I also made a few in a separate pan with just cheese on top for my son. They were all yummy. I enjoyed this sauce more than red enchilada sauce. These were super easy and I will definitely make them again.

Chocolate Syrup

Every bit as good as Hershey's and cheaper - I buy cocoa in bulk so it's a great buy. Great over icecream or in milk for hot chocolate or for any recipe calling for chocolate syrup. Note that It does not store as long as store bought.

Chocolate Shell Sauce

OMG - LOVE IT! I always loved magic shell but it's full of hydrogenated fats. Obviously this is not a health food but I feel more comfortable with using plain, wholesome butter - and besides, it's to die for. Thank you so much for the recipe!

French Pastry Pie Crust

Wow - I've never had a crust turn out better. Note that it is not a very sweet crust and needs the sugar. I tend to try to cut back on sugar with most recipes - do that with this one only if you are using it for a savory dish. I made it in my food processor - soo easy, and did not knead it - just formed it into a ball to chill and quickly rolled it out. First time I've ever made a pie crust that wasn't too heavy or hard!

Home Made Top Tarts!

Yum! - the kids loved this and it was fun to make with my daughter - she especially loved sealing the edges with a fork and eating them! I made them with the French Pastry Pie Crust from this site, using half whole wheat flour and butter (didn't have shortening on hand). I used a low sugar strawberry jam and used about a tablespoon because of one review that said it could use more. This was a good amount. Next time I am going to try to make a large batch to freeze prior to baking for a great treat to have on hand. Thanks for the recipe!

Baked Asparagus with Balsamic Butter Sauce

YUM! I followed other reviewers advice and used 1 TBL soy sauce and 2 basalmic vinegar. The asparagus was perfectly roasted and the sauce was terrific. Will make again.

Roasted Beets 'n' Sweets

This was very good. Even my husband had seconds. I was in a hurry and mixed it all together and threw it in the oven before I realized you are supposed to cook the beets first. It was OK becuase I chopped them small. Next time I will do the beets AND the onions first as I like the onions really browned. A minute under the broiler at the end of cooking would be good. I made this last night and am looking forward to the leftovers that are reheating right now.

Easy Turkey Tetrazzini

This was pretty good - I liked it, picky kids fussed. It was a little dry though so I would increase the sauce next time. I substituted french fried onions on top instead of parmeasan cheese and used homemade yougurt from this site instead of sour cream. That gave it a nice tang which, combined with the onions was a good flavor.

Homemade Yogurt

Yay! This was soooo easy and delicious. I made it in a large glass mixing bowl and put it in my electric oven overnight with just the light on. If it isn't thick enough in the morning I set the oven for 100 and leave it for a couple hours. Delicious! I was intimidated to try making yogurt and thought you had to have the yogurt machine. Now I will now be making it at least twice a week without the added nuisance of a machine taking up space. My son can eat 2-3 small containers a day (and he's only 6 1/2), and he loves this so it is going to save us a lot of money.***I just made this again and wanted to add that fresh yogurt is already sweet! Who Knew!

Fish Tacos

The stars are for the beer batter fried fish which was really good - the kids ate it up - and would be a good mix for fish and chips. For that alone I would have given 4-5 stars. I did not like the sauce, however. It was too tangy with yogurt AND lime. I can see how sour cream might have been better. I will be making the fish again - as it is way cheaper than the frozen beer battered fish. I used tilapia because I had frozen fillets on hand.

Butter Frosting

Yum. The first time I made this I followed the recipe exactly and it was great. This time I was in a hurry so I read the ingredients, threw it all in a bowl and beat it - still turned out perfectly, even though I didn't follow the instructions. Kids are enjoying the beaters right now!

Orange-Glazed Asparagus

This was really good. Even my daughter, who whined heartily about having to eat at least one piece raised her eyebrows and said "Mmmm" and ate more. My husband prefers another method I usually use, but said it was a nice change.
