I'm a mostly stay-at-home Mom and very part-time professional with two children, son 5/12, daughter 7. I have health issues I am working on by trying to eat right and getting regular exercise. I try to eat healthy most of the time but I have a terrible sweet tooth. My daughter has inherited this from me. I like to ride bikes, swim and go to the gym, but I would really enjoy just curling up on the couch with a good book. That RARELY happens. I recently got high-speed internet (after dial-up for 5 years) and I'm addicted. I expect that to subside after the newness wears off.
My favorite things to cook
Anything my kids will eat without saying 'yuck' first, and pleasing my "I'll eat anything" husband who is really quite picky (just doesn't like to admit it). I like to try new things but have learned to reign this in since having kids. They are good about certain exotic items (they love sushi) but still like the typical 'kid fare' - cheese and plain foods.
My favorite family cooking traditions
I love to do the Thanksgiving Turkey with all the trimmings, including a classic, home-made ceasar salad.
My cooking triumphs
We love to make fried rice with leftovers (meats and veggies). I've started using brown rice and it works just as well. I've gotten good at taking standard recipes and making them healthier either by reducing the fat and/or sugar content or adding healthy extras such as shredded zucchini (frozen from the garden).
My cooking tragedies
I'm terrible about leaving something under the broiler for just a minute - which turns into 10 minutes and the smoke alarm going off.

Crispy Fish Fillets
I wasn't sure about this recipe, it sounded a little weird with the mustard. I tried it mainly because I was in a hurry and it came up as one of the first recipes in my 'sole' search and was quick and easy. I did dredge in flour prior to the egg/mustard dip and I used panko instead of potato flakes because that is what I had. It's really good! And it was quick and easy.

I love these! They are easy to make but be patient, it takes a long time to reach 250 degrees F, but it is worth the wait. I greese a jelly roll pan and poor it in, spreading to make it even. Let it cool for a while and score it with a knife then I use kitchen shears to cut them, let them finish setting and wrap in wax paper. These are always a hit. I add walnuts and a little salt to enhance the flavor.

Macaroni and Cheese with Caramelized Onions and Bacon
This was delicious - even my kids gobbled it up. I used a bit less cheese and used parmesan instead of asiago,then I added shredded carrots and chopped leftover ham to the mix and skipped the bacon just because that is what I had. Also thought I had panko and didn't so I just used bread crumbs I made in the food processor from a couple heels of whole grain bread. The topping was great even without the bacon. I will definitely be making this again, but not too often, I'll eat too much of it!
