About this Cook
I'm a mostly stay-at-home Mom and very part-time professional with two children, son 5/12, daughter 7. I have health issues I am working on by trying to eat right and getting regular exercise. I try to eat healthy most of the time but I have a terrible sweet tooth. My daughter has inherited this from me. I like to ride bikes, swim and go to the gym, but I would really enjoy just curling up on the couch with a good book. That RARELY happens. I recently got high-speed internet (after dial-up for 5 years) and I'm addicted. I expect that to subside after the newness wears off.
My favorite things to cook
Anything my kids will eat without saying 'yuck' first, and pleasing my "I'll eat anything" husband who is really quite picky (just doesn't like to admit it). I like to try new things but have learned to reign this in since having kids. They are good about certain exotic items (they love sushi) but still like the typical 'kid fare' - cheese and plain foods.
My favorite family cooking traditions
I love to do the Thanksgiving Turkey with all the trimmings, including a classic, home-made ceasar salad.
My cooking triumphs
We love to make fried rice with leftovers (meats and veggies). I've started using brown rice and it works just as well. I've gotten good at taking standard recipes and making them healthier either by reducing the fat and/or sugar content or adding healthy extras such as shredded zucchini (frozen from the garden).
My cooking tragedies
I'm terrible about leaving something under the broiler for just a minute - which turns into 10 minutes and the smoke alarm going off.

Chicken Tortilla Casserole
My family liked this. I made it with an extra can of cream of chicken soup instead of the milk because I was afraid it would be too soupy per other reviews. Next time I will use the milk as it was a bit too salty. I cooked the chicken with taco seasoning as per other reviews, which also contributed to the saltiness. I will also try home-made taco seasoning next time, with less salt. I only let this sit for an hour before baking and the tortillas soaked up the liquid and swelled up for a nice enchilida casserole consistency. Very easy to make. Later: Just had this for lunch at work. Even better the next day!

Potunas
I thought these were very good and my 8 year old son loved them (he kept eating the filling while I was stuffing the skins). My husband thought they were OK and my picky 9 year old daughter would't eat them. But they're not tuna lovers so that is not a surprise. If you do like tuna, you'll love these. Thanks for the great idea.
