Alfredo Sauce

Reviewed: Feb. 14, 2014
Incredibly simple to make! Alfredo sauce was a last minute decision tonight and all I had on hand was Neufchatel cheese and shredded parmesan/Romano. I also didn't add quite as much milk after reading another review, using only 1 1/3 cups. This will be my go -to recipe for Alfredo sauce.

Grandma's Slow Cooker Vegetarian Chili

Reviewed: Nov. 19, 2012
This recipe is very forgiving in that you can use vegetables you have on hand and omit things. I did not use the Italian spices and omitted the garlic (my husband can't eat garlic, poor thing). It was fantastic! Next time I will add some diced green chilis for a bit of spicy heat, but the flavor was great. We had it with honey cornbread muffins.

Sunday's Apple Pie

Reviewed: Apr. 18, 2011
My husband LOVES this pie. I used 4 Jonagold apples, but I think it could have held 5 or 6 because they are small. I also added an extra 1/4 cup of sugar and reduced the cinnamon to 1/4 tsp (I cannot imagine 2 tsp of cinnamon. It would be overwhelming). This was the first pie I have ever made and it turned out very good. Easy to make.

Mexican Rice II

Reviewed: May 7, 2010
This rice was good, but a little bland. I would change the spices next time and add corn and maybe peppers; however, it was a nice touch on the chicken burritos I made!

Chicken Noodle Casserole I

Reviewed: May 5, 2010
Made it the same except that I did not add chicken and I used wheat germ for the topping. I boiled the noodles in water with two chicken bouillon cubes. I also used 98% fat free soup and lite sour cream. It's so good and easy!

Mexican Pizza

Reviewed: Jan. 5, 2010
This was really easy to make. I substituted Morningstar burger crumbles for meat. My husband loved it.

Sloppy Joes II

Reviewed: Jan. 4, 2010
I made this with Morningstar crumbles to make it vegetarian. It needed more sauce (turned out dry), but I don't think it was the fault of the recipe, it's because I used soy "meat." Otherwise, it was wonderful and very easy to make!

Golden Sweet Cornbread

Reviewed: Dec. 29, 2008
Excellent recipe. I made muffins instead of a whole pan and it didn't take quite as long to cook.
