Easy Enchilada Casserole

Resurrection Rolls

Although not the tastiest rolls, these were so much fun to make with my preschool class at church. I gave each child a marshmellow to represent Jesus which they dipped in the butter. Each child had a bowl of cinnamon and sugar to represent sin. They wrapped their crescent roll around the marshmellow. I baked them in silicone cupcake holders which kept things mostly clean.

Apple Bavarian Torte

Pretty tasty. I only used three granny smith apples, but should have used at least one more. I doubled the cinnamon/sugar. I put the almonds on before baking, and they turned out okay.

Grandmother's Buttermilk Cornbread

I followed the recipe exactly, and it was very good. Nice and smooth, which is rare with cornbread. I have made it just as written, but when I used 1.5 cups of cornmeal and only .5 cups of flour it had more flavor.

Six Can Chicken Tortilla Soup

This was simple and tasty. I used Rotel tomatoes, chiles with cilantro. I planned to use one can of cream of chicken soup but bought cream of mushroom on accident. My husband added red pepper to his. I simmered this in the crockpot for 3-4 hours on low.

Peanut Butter Bread

I have made this twice. The first time as directed with the exception of creamy peanut butter and a handful of crushed peanuts. The second time I double the recipe and substituted one cup of wheat flour and about one cup of low-fat peanut butter and again added crushed peanuts.

Skyline Chili I

I added the chocolate. This must feed six very hungry people, because I doubled the recipe and could have fed at least 20 people. Eight cups of water is probably too much. Using the immersion blender was fun.
