Peanut Butter Vegetable Chicken Soup

Reviewed: Jan. 22, 2011
I used the advice of others. I doubled the peanut butter. I simmered it then added about 1.5 cups of broth before adding it to the soup. I left out celery because we don't like it. I should have added a little curry and cayenne powders; my husband seasoned his servings with them.

This makes a lot. Mary Yoder's in Middlefield, Ohio serves it in squeezable honey containers.

Apple Bavarian Torte

Reviewed: Jan. 15, 2011
Pretty tasty. I only used three granny smith apples, but should have used at least one more. I doubled the cinnamon/sugar. I put the almonds on before baking, and they turned out okay.

Sandy's Casserole

Reviewed: Jan. 14, 2011
Maybe my changes (based on the recommendations of others) didn't work. I used 12 ounces of chicken, mostly Mexican cheese, one cup skim milk and one cup fat free sour cream, 1 can cream of chicken and 1 can cream of mushroom, no sliced mushrooms and topped it with bacon.

Creamy Peanut Butter Fudge

Reviewed: Dec. 23, 2010
Yummy and easy. It makes a very thick 9x13 pan, may use the jelly roll pan next time to make it thinner.

Skyline Chili I

Reviewed: Dec. 23, 2010
I added the chocolate. This must feed six very hungry people, because I doubled the recipe and could have fed at least 20 people. Eight cups of water is probably too much. Using the immersion blender was fun.

Marcia's Famous Sticky Buns

Reviewed: Dec. 19, 2010
The boys weren't crazy about the buns, but our Sunday School class loved them. I did not use the instant pudding and used more than 12 ounces of rolls.

Chocolate Waffles I

Reviewed: Nov. 27, 2010
My family (that normally loves chocolate) would prefer regular waffles. This also made a mess of my waffle iron.

Italian Rigatoni Casserole

I used half of the ground beef and half of the sausage and about 1.5 cups of mozzarella/mixed Italian cheese and a total of 32 ounces of sauce (Ragu light tomato and basil).

Chocolate Chip Pumpkin Cookies

Reviewed: Nov. 14, 2010
I followed the advice of others and doubled the pumpkin and cinnamon and added pumpkin pie spice. I also substituted Splenda for sugar and unsweetened applesauce for shortening. It was a bit "spongy" and not crunchy like expected for a cookie. However, my four year old said they are his new favorite cookie.

Baked Penne and Smoked Sausage

Reviewed: Nov. 1, 2010
If I make this again, I would layer the pasta, peas, sausage, cheese, and onions. Mixing it together prevented some of the pasta from baking. I would add carrots too.

I used Mexican vanilla and vanilla pudding, which gave it a stronger taste. I also made a giant cookie in a 15x10 jelly roll pan and baked it for about 18 minutes.
