Homesteader Cornbread

This was fantastic. I made a tiny change. I substituted butter for the oil and flipped the measurements of the flour with the corn meal. My family of 8 loved it!

Awesome Broccoli-Cheese Casserole

I love this recipe as is but I prefer using real butter, 2 eggs, bread crumbs on top, and 1/2 c sour cream 1/2c mayo. I recommend making this as is. Then you will know what changes you like to make.

Easy Cajun Jambalaya

Made this as is except for adding a can of diced tomatoes and omitted the hot sauce at the end. Perfect spice. Not overwhelming but a nice authentic flavor with the perfect kick. A favorite with every person here, all 8 of us.

Absolutely Ultimate Potato Soup

Mediterranean Quinoa Salad

I've made this recipe several times now. The first time I made it exactly as written. I thought the flavor was way way too strong. I did not care for it at all then. Luckily for me I know I like this salad (I've had a version elsewhere). I made several changes now- I use cucumber, quinoa made as stated, orange green and yellow pepper, red onion. I omit the rest as I don't care for olives or chicken in this salad. For the dressing I add roughly 5 TBSP lemon Juice and 2-3 TBSP olive oil and 1 TBSP balsamic vinegar. I know this is quite a difference from the original recipe however I didn't much care for the original and rated it as such. The good thing is I got my recipe from tweaking this one so it's a win

Cranberry Orange Loaf

Omg... the batter alone is beyond delicious. Yes, I tasted it. I can't wat to eat the bread! Itwas so good I immediately made a second batch. Mine got done baking in 45 minutes.

Tasty Buns

I just made these buns. I have 2 bread machines so made 2 batches and just threw them in the machine on the dough setting. I added the ingredients differently though.Warm water, yeast, warm milk, oil, then the dry ingredients. After the cycle was done I just made 12 rounded balls and egg washed them. 15-16 minutes in the oven. They were a little bland, maybe a little dense. Add butter to them and YUM. Next time I will try hand mixing and sub butter for oil. I will keep looking for the right bun recipe though

Fruity Curry Chicken Salad

This is beyond awesome. I add a lot of extra curry to mine because I love it like that but this recipe is delicious. I can eat this all day. It is great as written and a must have for every recipe box!

Broccoli Cheese Soup

The reason for 4 stars is because I will make changes from now on to this recipe. As written though it is very very good! Changes I will make from now on: Will use heavy cream in place of milk, will use only fresh broccoli and will almost double the amount, will use 1/4 cup butter (1/2 is way too much and I don't even care how healthy it is. It is just un necessary), I will certainly ad more cheese. Most likely an additional 1/2 pound. I will update in a week when I make the next batch but I am certain it will be phenominal. Definitely a MUSZT have recipe however. The possibilities with this are endless.

Easy and delicious. Add whatever flavor you want for variation. Use any type of crust. I used oreo crust. Delicious. If I managed this anyone can. Do be careful not to over beat or cool too quickly. That is beyond important.

Grandmother's Buttermilk Cornbread

I really love this recipe. Having tasted other family members' cornbread, I was afraid to try it myself since I didn't like theirs. But my daughter and husband insisted. So I came upon this one. I love it. I make it as is. No changes. I use a cast iron skillet to melt the butter and mix sugar in on the stove, then add everything else and bake it in the skillet. Tastes fabulous. Done in 30 minutes every time. Tastes phenominal every time. I am a bit un-PC and occasionally use bacon grease, lard, ect for some of the butter. Tastes great. I am normally a very healthy eater and save my splurges for certain things like this ;)

Homemade Pancake Mix

Maybe I'm just used to the time consuming recipes, but I thought this tasted just like boxed pancake mix- NOT a compliment. I found it dry and tasteless. Luckily I was able to taste some pancakes before making the entire batch so I added some salt, vanilla extract, butter to the remaining bit. MUCH better. I am not a proponent of salt, however it is necessary in some occasions. This is one of them in my opinion. Next time I will use buttermilk instead of milk, use less egg, add some real butter and also 1-2 tsp vanilla extract. THEN it will be out of this world. As the recipe stands, 4 stars is generous- Unless you like boxed mixes from the stores.

Ten Minute Enchilada Sauce

I have to give this 4 stars because I had to change things up. As a basic starter it is 5 stars though. I used my own canned tomato sauce, however I used less chili powder and more onion salt. I also used a lot more garlic powder. It was fantastic. This is going to be my new enchilada sauce for good.

Peach Pie

I made this last night and it was awesome! I used frozen peaches and it was great. I do highly recommend starting it at 450 for 15 minutes and 350 for 30 minutes. Works very well for me. With 6 kids this didn't last a day. Today I made it with three fresh peaches and a small bag of frozen raspberries (minus any juice) and I think I'm in heaven. With a recipe this easy, how am I going to continue to fit in my pants? !

Curry Pumpkin Soup

Oh my gosh!!! This is excellent! My 6yr old son asked for pumpkin soup even though he's never had it (no one in my family has). So I bought pumpkins and made this recipe. Wonderful!! I used heavy cream and sauteed onions. I recommend this recipe

Banana Cream Pie I

I personally didn't eat this, but my PICKY 11 year old did and she loved it! I did however use a nilla wafer crust and I did not bake it. It turned out perfect this way.
