10 Pound Cheesecake

Tastes great, very creamy and rich. Did not firm enough to serve cut pieces, more of the consitency for perfect use in a trifle or parfait.

Chinese Broccoli Slaw

I used sunflower seeds instead of sesame seeds and I skipped the butter, but did toast the ramen noodles, almonds and seeds in the oven before using to give them a better flavor. I used balsamic vinegar and olive oil in the dressing too. The family loved it and will make it again.

White Chocolate Gorp

I, too, made the mistake of using Nestle Premeire White Morsels and it never melted, just globbed up and was a mess. So I used melted milk chocolate chips and it tasted great! I used Honey Grahams and Peanut Butter Cap'n Crunch for the cereal and it was awesome!

Chicken and Dumplings III

I have made this for many years using lots of the revisions already mentioned, except to avoid that canned biscuit letdown as dumplings, I use flour tortillas cut into strips. They cook much faster and they really taste more like dumplings (and not at all like tortillas). Good recipe!

King Ranch Chicken Casserole III

This recipe has been in my family for years, but we do not do two layers - just tortillas in strips topped with chicken, topped with shredded cheese (we use 1 lb. Velveeta or mexican Velveeta is even better and so creamy melting)and then pour the soup mixture over all. I usually make it a few hours before I bake it and the soup mixture always makes its way through the entire casserole and is never too dry at the bottom. This also allows the flavors to blend well. It also freezes or keeps in the fridge well this way if you want to bake it the next day or later. A total fave of all my boys!

Brenda's Lasagna

Good basic recipe, just needs a little oomph. Double the sauce, include parmesan cheese with the cheese mixture, spice up the sauce with some oregano or Italian seasoning and add some mushrooms (canned or fresh) and black olives to the sauce. I also used part Italian sausage for my meat, along with the ground beef.

Delicious Ham and Potato Soup

I needed something to make with leftover ham and this really fit the bill! I will make this over and over again. The whole family enjoyed it, even though I left out the onions as I don't care for them. I have never felt like I made good homemade soup, but this was so simple and so satisfying! Thanks.
