Taco Casserole

Very good and quick to make! I think in the future I would only change one step: I cooked this for only my husband and me (intending to use leftovers for lunches). The tortilla chips were very good the first night we ate it. But by the time we ate it for leftovers, the tortilla chips were obviously soggy. Next time I will probably just put tortilla chips on the portions on our plate (it doesn't make a huge difference if you put them on the casserole as you're baking it the oven; when I eat leftovers, I just reheat a portion, and then add tortilla chips to the top). A friend of mine suggested adding corn and kidney beans. I think I will try this next time.

Baked Teriyaki Chicken

Very good. I started the dish by cooking uncovered, but noticed the sauce was starting to burn on the sides of the pan, so I would cook covered in the future. My husband loved it, and he says that he usually doesn't like teriyaki chicken.

Butternut Squash Bisque

Amazing! I had tons of butternut squash in my garden. My husband isn't a huge fan of butternut squash, but he said he would like it if I made it into a soup. This soup is so good and so easy to make. I've never cooked with butternut squash, so I wasn't sure how to cook it. I did as other reviewers said: sliced it in half, placed it in a pan with a little water, covered with foil and cooked in the oven for about 30 minutes. I halfed the recipe, so 1 butternut squash was perfect.

Roast Pork with Maple and Mustard Glaze

Fantastic! The pork I used was almost 6 lbs... So I reduced the temperature by 25 degrees and it was in the oven for almost 2 hours. I took it out every 30 minutes or so to baste with the glaze. It was delicious! Made it for my in-laws for dinner and everyone commented on how good and tender the pork was!

Zucchini Spread

Very good - served with Tostitos. Made this for a dinner with friends - they absolutely loved it. Made according to the recipe but added a little bit of garlic as well. I have tons of zucchinis in my garden this summer, so I'm always looking for ways to use it up. Never thought to use it in a dip, but it's very tasty!

Creamy PHILLY Chicken Pot Pie

Excellent!!! I cut the recipe in half (cooking for two) and made individual pies. I didn't have chicken breast, but I had boneless chicken thighs, so the meat was very tender. I also used puff pastry instead of a pie crust - this was delicious! The cream cheese gives it a great flavor!

Chicken and Cashews

Very good! I enjoy Asian food while my husband doesn't really care for it. This was a great compromise! The chicken breast I used was quite large, so I doubled the sauce and the amount was perfect.

Chicken Meatballs and Spaghetti

This rating is only for the meatballs as I didn't make the sauce. The meatballs are delicious! I have found great recipes for turkey meatballs, but I have a hard time finding ground turkey, so this recipe is great. Great flavour.

Cheesy Beef Spirals

Very good and easy to make. I only made minor adjustments. 1) I didn't have any American cheese, so I just added more mozzarella. 2) During the last 5 minutes (uncovered) I added some Parmesan cheese to the top. 3) While cooking the sauce/beef mixture, I added some oregano and Italian seasoning for more flavor. And 4) I didn't have any spiral noodles, so I just used regular spaghetti noodles. My husband loved it! "It's like spaghetti, only BETTER!"

Yummy Honey Chicken Kabobs

Very good! I cooked this for my husband and me for dinner, and I loved it! I am always looking for new recipes for the BBQ, especially now that it is getting really warm, and I try not to cook in the house as much. I didn't make kabobs, but I used the recipe as a marinade for chicken breasts. I will definitely be making this again!

Heavenly Angel Food Cake

Very good! Won't make packaged angel food cake from the grocery store anymore! Made this for a friend's birthday party and EVERYONE loved this! I baked in one 9in and one 10in springform pan (only needs to be in the oven 15-20 minutes at the most - easy to keep an eye on it). I stacked the two cakes using a mixture of Cool Whip and pureed strawberries in the middle. I then topped the whole cake with Cool Whip (using the low fat Cool Whip is a healthier option) and added strawberries. Delicious!

Weeknight Lasagne Toss

I really enjoyed this one (and because I made a full recipe for just my husband and me, I really enjoyed all the leftovers too!). I didn't have any Italian dressing in the house, so I used Kraft's Sun Dried Tomato and Oregano. I did as another reviewer suggested and browned the meat and then drained the fat. I also added more veggies (always looking for ways to get more veggies in my meals) - added mushrooms and zucchini along with the green pepper (which I reduced to 1 since I added the other ones) and onion. I really enjoyed it - different from just regular spaghetti, but definitely not as much work as lasagna.
