Luscious Slush Punch

Very good. I only rated 4 stars because there is WAY too much sugar in this recipe. Because of other reviews, I cut back on sugar, and next time I will cut back even more. However, the punch was very good and people loved it!

Zucchini Spread

Very good - served with Tostitos. Made this for a dinner with friends - they absolutely loved it. Made according to the recipe but added a little bit of garlic as well. I have tons of zucchinis in my garden this summer, so I'm always looking for ways to use it up. Never thought to use it in a dip, but it's very tasty!

Brown Sugar Banana Nut Bread I

Jo's Rosemary Bread

Very good! I did what others did and baked in the oven (in two small loaves) after making the dough in my bread machine. My bread machine is for 2 lb loaves, and this recipe is for a 1.5 lb loaf; I wasn't sure how the ingredients and bake time would change, so to be on the safe side I just baked in the oven. It was really tasty, and the company we had over for dinner loved it.

Downeast Maine Pumpkin Bread

This recipe is amazing. Everyone loved it. If you are looking for a "healthy" dessert, this is NOT it! The sugar and oil is a little extreme, but the loaves are amazing! I prefer this over any zucchini or banana bread I've made recently.

Taco Casserole

Very good and quick to make! I think in the future I would only change one step: I cooked this for only my husband and me (intending to use leftovers for lunches). The tortilla chips were very good the first night we ate it. But by the time we ate it for leftovers, the tortilla chips were obviously soggy. Next time I will probably just put tortilla chips on the portions on our plate (it doesn't make a huge difference if you put them on the casserole as you're baking it the oven; when I eat leftovers, I just reheat a portion, and then add tortilla chips to the top). A friend of mine suggested adding corn and kidney beans. I think I will try this next time.

Cajun Style Baked Sweet Potato

Very tasty! I love sweet potatoes! I sliced these into about 1/4-inch slices. They taste more like sweet potatoe fries this way (which my husband loves!). But then the cooking time is reduced considerably (about 15 minutes - I can't remember and didn't have a timer on - just kept an eye on them in the oven).

No Bake Peanut Butter Pie

This recipe is fantastic with moderations. Instead of prepared pie shells, I make my own crust with cookie graham crumbs. Then I make the cake as directed and finish by putting crunched up Oreos on top (like the picture). A big hit! And it's good right out of the freezer, or defrosted for a while.

Banana Crumb Muffins

Yummy! I made with all whole wheat flour, so they weren't as moist as I thought. Next time I will use less, or only substitute a little bit. Husband loved them - especially the topping.

Florentine Artichoke Dip

Butter Tarts

Very good! I baked these for my dad who is very picky and doesn't like change! He always makes butter tarts from his mom's recipe (which is also very good), but I wanted to try another recipe. While I was baking them, I even told my husband "DON'T tell my dad that I used another recipe!" But he loved them! I omitted the walnuts because my dad probably would have disowned me if I made them with any kind of nuts :) Very good. Easy to make if you use store-bought tart shells. Next time I will use my dad's recipe to use the tart shells, and this recipe to use the filling.

Zucchini Stuffed Chicken

Would have rated it higher, but the hubby didn't like it... I used chicken breasts and pounded them till they were flat. Then I rolled the stuffing up inside. It didn't stay very well, but I didn't have breasts with the skin on them. I really liked the taste, but my husband said he wasn't a huge fan. I will make again (because I enjoyed it!) but not too often.

Chicken and Cashews

Very good! I enjoy Asian food while my husband doesn't really care for it. This was a great compromise! The chicken breast I used was quite large, so I doubled the sauce and the amount was perfect.

Cheesy Beef Spirals

Very good and easy to make. I only made minor adjustments. 1) I didn't have any American cheese, so I just added more mozzarella. 2) During the last 5 minutes (uncovered) I added some Parmesan cheese to the top. 3) While cooking the sauce/beef mixture, I added some oregano and Italian seasoning for more flavor. And 4) I didn't have any spiral noodles, so I just used regular spaghetti noodles. My husband loved it! "It's like spaghetti, only BETTER!"

Foil-Pack Taco Chicken Dinner

Delicious and very easy to make! I didn't have chicken breasts, so I used boneless chicken thighs instead. I didn't make it with the potatoes because my husband wanted french fries instead, so I can't comment on other people's bad potato results.

Broccoli Chicken Divan

Tasty, but I made a couple of changes. I didn't have cream of broccoli soup in the house, so I used a cream of cheddar. It has more of a kick, so I decided to throw some green onion in as well. I also used garlic salt as I cooked the chicken.

Spanish Rice Bake

This was very tasty. I wasn't sure how it would turn out because it looked really runny at first, but once the rice cooked a lot of the moisture was absorbed. My husband hates rice, and he even didn't mind this dish. (I put sour cream on the table for him to mask the rice.) I also added green onion to the top (after adding the cheese) before cooking in the oven. This also added a nice flavour. I will definitely make this again! Although my husband only found this "ok," that is definitely saying something since he absolutely hates rice dishes!
