Banana Muffins I

After reading the reviews I had to try this recipe and I luv luv luv it. The thing I had to change was the flour since I doubled the recipe (due to the reviews and I'm glad I did) I used 1cup rice flour and 1 cup gluten free all purpose flour, then added 1tsp xanthum gum as the thickening agent. And I did use the small tropical bananas because I find they have more flavor. These are sooooo my favorite!!

Cream Cheese Frosting II

Love this icing! I did add about a half of a cup more sugar, and I beat on slow the icing sugar into the cream cheese and butter mixture to make it even more creamy.

Chocolate Ganache

Super easy and tastes amazing! I made this to put in between my red velvet cake layers on top of the cream cheese frosting, the results were great! Although since I wasn't really thinking and should've halved the recipe I know have lots of ganache left over......oh well guess that means more baking and I'll use it as a frosting :0)

Whipping Cream Pound Cake

Love this cake!! I did make a couple of changes though after reading some reviews. I only used 5 eggs and since I'm gluten free/wheat free I used Bob Red Mill all purpose flour and 1/2 tsp of xanthem gum for the binding agent. It turned out super moist, no one could tell it was gf/wf and there was none left at the end of the BBQ :0)

Banana Banana Bread

I tried this recipe for the first time and loved it! Although I did change it just a bit (as I always seem to do with recipes haha, mostly because I am gluten free who free) I added 1/2tsp of baking powder, 1/2tsp vanilla, I totally forgot the salt (not on purpose) I used an extra cup of bananas, changed the flour to King Aurthor multi purpose gluten free flour (this one is a bit more than Bob's Red Mill but I like the end product better) and 11/2 tsp xanthum gum. I only needed to bake this for 60 mins, and it was a hit! Moist, light, banana goodness!
