D's Famous Salsa

This salsa is amazing. So easy, but so good. I have stopped buying salsa in the store now, and I make this once a week. I usually use two cans mexican rotello tomatoes and a jalapeno for some kick, omit the garlic, then stick to the recipe. Pulse for a few quick seconds...done!

Mock Tuna Salad

Just amazing. What a great vegetarian meal. You can also make it vegan by usin vegannaise. I think it is essential to puree the chickpeas, and I added celery and subbed yellow onion for green onions becase it is what I had on hand. Have been eating it all week and still love it!

Easy Asparagus

Simple and delicious, what more can you want out of a recipe? I didn't use the crackers, but will try it next time. But even without, I thought this was just a great way to have asparagus. Thanks for the recipe Beckerkorn!

Ratatouille Bake

An excellent idea to use up fresh veggies from our local farm. The only changes I made was to use a can of fire-roasted tomatoes to add a little flare, and I added a pinch of sugar to the veggies to cut the bitterness of the tomatoes and eggplant...next time I may also use more than 8 oz. ravioli to make it a bit more filling. Otherwise a great meal!

Crustless Spinach Quiche

I made this for some guests this weekend and it was gone in a snap. I added a half can of diced tomatoes (drained), half of an orange bell pepper, fresh basil, and nutmeg. So easy to make. I will be making this one a lot.

Lentil Barley Soup

Great soup! I used homemade veggie broth and skipped the veggie soup mix, used vegetable oil in place of margarine, and added a few spices: 1 Tbsp. thyme, 1 Tbsp. cumin, 1 tsp. parsley, and 1 tsp. paprika. I added a chopped zucchini at the same time as the carrots because I had one to use up. I also used crushed herbed tomatoes in place of diced. Came out very thick but I was happy with the consitency and flavor.

Extra Easy Hummus

Thank you, thank you, thank you! I have been complaining for a while now that I would like to make my own homemade hummus but tahini is just too expensive and I could only find large cartons of it. This worked great! Added a bit of lemon juice and a little extra garlic. Next time I will add roasted red peppers for flavored hummus (and next time will be very soon!).

Spring Asparagus Salad

Loved it! The only thing I did differently was to sub agave nectar for sugar and I used all sesame oil (some guests had peanut allergies). Great side dish!

French Spring Soup

Wow! My Italian husband who was disappointed that I wasn't making a minestrone just said this is one of the best soups I have ever made. I made a few slight changes: Added 2 cloves garlic, added fresh thyme, added a vegetable bouillon cube, added a few shakes of pepper, and used half and half in place of heavy cream. Outstanding recipe!

Hearts of Palm Dip

I have never seen a dip go so fast in a small crowd. People could not stop talking about how good this was. I did make some changes just based on what I had on hand - I used less green onions and didn't have mozzarella so used all parmesan and asiago cheese. I also used vegannaise because one of my friends is allergic to eggs. I served it with roasted red peppers in the center. Thanks for this one!!

Spinach Balls

Made these for Christmas eve and they were great...fastest thing to go by far. I made them exactly as the recipe calls for, and served them with hot marinara sauce, which I think was a good touch.

Romanian Apple Cake

Awesome! Used 3 tsp. baking powder in place of baking soda, and only about 1 1/4 cups sugar. Besides that followed the recipe to a T. Served warm with whipped cream, came out great!

Creamy Italian Dressing I

Excellent! At first I though it tasted too much like mayo and almost added more vinegar, but I'm glad I didn't because after it sat for an hour in the fridge it was perfect. I am sure I will make this one regularly.

Sally's Spinach Mashed Potatoes

Wow, awesome! I have to admit I didn't expect much, but we really liked this (even my husband who reallyjust wanted plain mashed potatoes). I halved the recipe for the two of us. I sauteed fresh spinach with the onions and some fresh garlic, added the dill to the spinach, used half the amount of cheese (some mixed in and some on top); also added some pepper. Covered while cooking the first 15 minutes then uncovered the last 5 minutes to allow the cheese to brown just a little. Will make again and again.

Best Chocolate Chip Cookies

I am a horrible baker, but these came out absolutely amazing. It has been over a week since I made them and they are still soft and yummy. I used 1 1/2 cups brown sugar and 1/2 cup white sugar, chilled the dough for one hour, and baked at 325 for 10 to 12 minutes on wax paper. Wow!

Basil Butter

Wow, this is such an amazing idea. I have added other herbs in addition to basil, but it is up to you whether to do so or not. I add it to baking veggies and the best is bringing a few dollops with you to add to dutch oven veggies while camping. THANK YOU!!

Pork Chops a la Slow Cooker

This is the first meat dish I have ever made - I am a vegetarian but wanted to make something special for my hubby. He gave it five stars (and trust me, he is an honest and tough critic)...I made the following changes: used 1 can chicken broth instead of soup, added pepper to the flour mixture, did not trim the fat from the bone-in pork chops I used, used the dry mustard but also added some regular mustard to the broth, and added chopped carrots and onions the last hour of cooking. Four hours on low and they were perfect (according to my husband and his meat-eating friends).

Beer Margaritas

Wow! I am not sure I will ever make margaritas with margarita mix again. These were perfect, and even those who didn't want a margarita started drinking them after tasting one. I subbed ginger ale for water and used Corona light for the beer. Only added ice to the glasses, not the pitcher. My only major suggestion is to buy more limeade so you can make more than one batch because these will go quick!

Quick and Easy Home Fries

Made these with breakfast this morning. Very easy. As some others suggested, I pat the potatoes dry with paper towels before adding to the pan, and added some diced onion, Italian seasoning, and paprika. Took about 25 minutes (uncovered the whole time). Came out great!

Swiss Chard with Pinto Beans and Goat Cheese

Followed this almost exactly and couldn't have been happier. I omitted the butter, subbed safflower oil for vegetable oil, and used feta instead of goat cheese. Just used proportions of beans and cheese to match the amount of chard I had. Served with eggs and fruit for a nice brunch. Thanks!
