Sally's Spinach Mashed Potatoes

Wow, awesome! I have to admit I didn't expect much, but we really liked this (even my husband who reallyjust wanted plain mashed potatoes). I halved the recipe for the two of us. I sauteed fresh spinach with the onions and some fresh garlic, added the dill to the spinach, used half the amount of cheese (some mixed in and some on top); also added some pepper. Covered while cooking the first 15 minutes then uncovered the last 5 minutes to allow the cheese to brown just a little. Will make again and again.

Extra Easy Hummus

Thank you, thank you, thank you! I have been complaining for a while now that I would like to make my own homemade hummus but tahini is just too expensive and I could only find large cartons of it. This worked great! Added a bit of lemon juice and a little extra garlic. Next time I will add roasted red peppers for flavored hummus (and next time will be very soon!).

Vegetable Chowder

I have to say that this was a great change of pace from my normal bean soups. Loved the richness but even though I cut down the cheese to two cups (and I LOVE cheese), I still thought it was a little too cheesy and will use less next time. Just used the veggies I had on hand, bell pepper, onion, zucchini, summer squash and asparagus and added some dried thyme. Garnished with a sprinkle of cheese and the aspragus heads. Will definitely make again.

Mock Tuna Salad

Just amazing. What a great vegetarian meal. You can also make it vegan by usin vegannaise. I think it is essential to puree the chickpeas, and I added celery and subbed yellow onion for green onions becase it is what I had on hand. Have been eating it all week and still love it!

Mexican Bean Pie

Great vegetarian meal. I started by sauteeing some onion and bell pepper, then added some crushed garlic. Then I added all the ingredients called for, adding a can of diced tomatoes and some onion powder (and leaving out the jalapeno because my hubby doesn't like spicy). Came out yummy, but next time I think I will smash all the beans with a potato masher for texture purposes.

Creamy Italian Dressing I

Excellent! At first I though it tasted too much like mayo and almost added more vinegar, but I'm glad I didn't because after it sat for an hour in the fridge it was perfect. I am sure I will make this one regularly.

Ricotta Gnocchi

Very good and very easy. Only made the gnocchi (not the sauce). Doubled the recipe and froze half. Had to boil for more like 5 minutes for it to be cooked through, but came out great. One thing - I don't think this recipe serves 5. We had 4 people and they were small servings...next time I'd make more for 4 people.

Alicia's Aloo Gobi

Thank you for this recipe Alicia. This was very easy and had some good flavor. I used fresh ginger because I had it on hand, and suggest definitely using all of the cayenne...I didn't think it had enough heat so I even added some more at the end. I added some frozen peas a couple of minutes before the dish was done which added some nice color. I was nervous that there wouldn't be enough liquid because my veggies and potatoes came right up to the top of the liquid in the pan, but it came out great. Make sure you cut your potato cubes all the same size, and I suggest not draining the canned tomatoes. Will definitely make again, thanks!

Roasted Garlic Scalloped Potatoes

Very good. I used 5 potatoes and cut the rest of the ingredients in half upon learning that my can of soup was only 10 oz. Still thought it came out great, and even my husband who wanted me to "just make basic mashed potatoes" said this had a very nice flavor.

Sweet Carrot Salad

I made this because I had a ton of carrots to use up, and was pleasantly surprised with the taste. I am not a big fan of cole slaw, but this was great. I used the baking raisins that are already plump, and added some orange zest. Saved well for a couple of days, too!

Chocolate Cobbler

I made this for my hubbie for Valentine's Day, and it came out great. A bit too rich for my taste, but my hubbie loved it and so did our guests the next night. As others suggested, I subbed 1 cup flour with 1 tsp. baking powder and 1/2 tsp. salt for self-rising flour and used only 1 1/4 cups water. Baked in a 9x9-inch pan; came out great!

Jet Swirl Pizza Appetizers

I made a vegetarian version of these using provolone, shredded cheddar, onions, kalamata olives, and mushrooms. I used Pillsbury french loaf as another suggested and brushed the top with olive oil and topped with Parmesan. Came out tasting great, but the top popped wide open 10 minutes into cooking. I didn't flatten the dough too much and didn't overstuff, so I'm not sure what happened. Will definitely make again though.

Butternut Squash Enchiladas

I thought these were pretty good. We used wheat tortillas instead of corn (heated in the preheated oven for 30 seconds each), and subbed one fresh roma tomato for sundried tomatoes because they were so expensive. We also subbed shredded Mozzarella cheese for cojita. I also added a bit of curry powder and dried cilantro to the onion while sauteing. We all liked these but thought it could use more of a kick (like more curry powder or red pepper flakes), and thought it was important to use fresh cilantro and not replace with the dried spice like we did.

Romanian Apple Cake

Awesome! Used 3 tsp. baking powder in place of baking soda, and only about 1 1/4 cups sugar. Besides that followed the recipe to a T. Served warm with whipped cream, came out great!

Lentil Barley Soup

Great soup! I used homemade veggie broth and skipped the veggie soup mix, used vegetable oil in place of margarine, and added a few spices: 1 Tbsp. thyme, 1 Tbsp. cumin, 1 tsp. parsley, and 1 tsp. paprika. I added a chopped zucchini at the same time as the carrots because I had one to use up. I also used crushed herbed tomatoes in place of diced. Came out very thick but I was happy with the consitency and flavor.

Pasta Shells Florentine

I made these for dinner last night and thought they were pretty good. I used ricotta in place of cottage cheese, used a whole egg, and used fresh spinach in place of frozen. They didn't have a ton of flavor but were an easy, filling meal. I think I will add some sauteed veggies and maybe some more spices next time to add to the flavor.

Cheese Garlic Biscuits II

Outstanding! I cut the recipe in half (for just me and my hubby) and used twice the amount of baking powder in place of baking soda. I added a bit of garlic powder and parsley to the batter and skipped the last step of adding the garlic butter. I also made the batter ahead of time and kept it in the fridge for a few hours. Rose no problem and were done in 13 minutes. Delicious.

Quinoa Side Dish

Wow! I made quinoa last year and didn't really like it, but I had half the box left so decided to try this recipe. It is amazing. I added fresh basil, and lots of diced veggies (tomatoes, mushrooms, onions, garlic, bell pepper, and zucchini). It was a huge hit, and I'll be buying quinoa again and again just to make this recipe.

Carla's Fruit Dip

Pretty good. I made this last week for a dessert for dinner guests and I think people ate more of the dessert than the dinner. I used 8 oz. strawberry cream cheese, and added 1 tsp. vanilla extract and about 1/3 cup Bacardi rum. I also grated a strawberry over the dip to add some color, which I think worked great. Will definitely make it again.

Olive Cheese Melts

Made these for Christmas Eve, as written except that I used some mayo and some cream cheese, used green olives instead of black, and did not add the salt. I also used wheat English muffins. Pretty good overall; it may have been the taste of the green olives I used, but many said they tasted a bit like McDonald's cheeseburgers...strange, I know. Next time I will probably only use the cream cheese and skip the mayo, which made them kind of difficult to cut cleanly once out of the oven.
