Peach-Basil Sangria

I reduced the sugar and added more wine, but still a bit too sweet for most folks. Also, it is a MUST to strain the basil after cooking, otherwise the leaves become a total pain. I used mostly peach nectar the first time and mostly mango nectar the second time and preferred the mango.

Sorrel Soup

This was pretty good. I cut the recipe in half and thought it made about 1 1/2 servings. Subbed 1 large potato for rice and subbed milk and butter for cream. Added 1 bay leaf. It was a nice light soup and will likely make it again when I get sorrel from our co-op farm next year. Thanks!

French Spring Soup

Wow! My Italian husband who was disappointed that I wasn't making a minestrone just said this is one of the best soups I have ever made. I made a few slight changes: Added 2 cloves garlic, added fresh thyme, added a vegetable bouillon cube, added a few shakes of pepper, and used half and half in place of heavy cream. Outstanding recipe!

Beer Margaritas

Wow! I am not sure I will ever make margaritas with margarita mix again. These were perfect, and even those who didn't want a margarita started drinking them after tasting one. I subbed ginger ale for water and used Corona light for the beer. Only added ice to the glasses, not the pitcher. My only major suggestion is to buy more limeade so you can make more than one batch because these will go quick!

Mushroom Kabobs

Very yummy! I used dried herbs (1/2 the amount of fresh called for) and subbed basil for rosemary because I didn't have time to crush the rosemary. I also used one large clove of garlic, and even though we love garlic I thought it was overpowering so may leave it out or only use half of the amount called for next time. We also added onion wedges, which I highly recommend.

Best Chocolate Chip Cookies

I am a horrible baker, but these came out absolutely amazing. It has been over a week since I made them and they are still soft and yummy. I used 1 1/2 cups brown sugar and 1/2 cup white sugar, chilled the dough for one hour, and baked at 325 for 10 to 12 minutes on wax paper. Wow!

Coconut Curry Pumpkin Soup

YUM! Thanks for this great vegan recipe. I used fresh pumpkin, a little extra vegetable broth to water down my full fat coconut milk, and added some turmeric, chili powder, fresh ginger and garam masala. Threw it all in the slow cooker and blended with the immersion blender...a great meal just two hours later.

Green Salad with Cranberry Vinaigrette

I was asked to bring a green salad to Thanksgiving dinner and used this recipe. Very glad I did, what a hit! Added agave nectar to the dressing to cut down on the vinegar taste, and added craisins to the salad. Very good, thanks!

Libby's® Famous Pumpkin Pie

So easy and was a hit. I subbed about 8 oz. sweetened condensed milk for evaporated milk. Also baked the crust for a few minutes by itself before filling, based on tips from others. Used fresh ginger, and this was perfect.

Cucumber Sandwiches III

Loved these, and so did everyone at the party...I made about 60 and they were gone in a snap. I wanted them to really be "sandwiches," so I topped them with another piece of bread spread with a bit of the cream cheese mixture. Just used regular white bread and made them small. So good!

Simple Baked Apples

Liked these a lot. Put them in the slow cooker on low for about 1 1/2 hours; subbed apple juice for the milk, and omitted the raisins and walnuts. I also subbed a bit of allspice for the cloves. A little too sweet for breakfast or a side dish for me, but perfect for dessert. May cut down on the sugar next time.

Vegetable Whip

Great way to use up the parsnips I had (which I subbed for turnips). I also subbed leeks for the onions because it is what I had on hand and added a vegetable bouillon cube to the water. I cooked the carrots, parsnips and leeks a bit longer than the potatoes, then used my immersion blender to puree the veggies (the hand mixer wasn't cutting it with the carrots). Came out fluffy and yummy.

Hot and Sour Tofu Soup (Suan La Dofu Tang)

I really liked this more than I expected I would. I added a bit of water because I like a lot of broth in my soups, used extra firm tofu, added 2 extra Tbsp. of Thai chile sauce for heat, and used lemon juice in place of citric acid powder. All very small changes, and very happy with the results. Simple and yummy!

Baked Kale Chips

Fabulous. These lasted about 30 seconds with my skeptical hubby, who ate them all! I give it four stars because I cooked the first batch for 8 minutes...burnt. Second batch for 6 mintues...perfect. 10-15 minutes would have been way too long, maybe because I had them in a single layer.

Swiss Chard with Pinto Beans and Goat Cheese

Followed this almost exactly and couldn't have been happier. I omitted the butter, subbed safflower oil for vegetable oil, and used feta instead of goat cheese. Just used proportions of beans and cheese to match the amount of chard I had. Served with eggs and fruit for a nice brunch. Thanks!

Spring Asparagus Salad

Loved it! The only thing I did differently was to sub agave nectar for sugar and I used all sesame oil (some guests had peanut allergies). Great side dish!

Easy Asparagus

Spicy Bean Salsa

I had high hopes for this recipe but wasn't super excited with the result. I let it marinate overnight but still didn't think it had a ton of flavor. Was good heated in a wrap with some cheese, but I prefer just a yummy salsa for chips and dip. Thanks though.
