French Spring Soup
Wow! My Italian husband who was disappointed that I wasn't making a minestrone just said this is one of the best soups I have ever made. I made a few slight changes: Added 2 cloves garlic, added fresh thyme, added a vegetable bouillon cube, added a few shakes of pepper, and used half and half in place of heavy cream. Outstanding recipe!

Beer Margaritas
Wow! I am not sure I will ever make margaritas with margarita mix again. These were perfect, and even those who didn't want a margarita started drinking them after tasting one. I subbed ginger ale for water and used Corona light for the beer. Only added ice to the glasses, not the pitcher. My only major suggestion is to buy more limeade so you can make more than one batch because these will go quick!

Mushroom Kabobs
Very yummy! I used dried herbs (1/2 the amount of fresh called for) and subbed basil for rosemary because I didn't have time to crush the rosemary. I also used one large clove of garlic, and even though we love garlic I thought it was overpowering so may leave it out or only use half of the amount called for next time. We also added onion wedges, which I highly recommend.
