Peach Ice Cream

I over-picked when I went peach picking and have been making a gazillion peach-inspired dishes for the last week. Thought I'd give ice cream a try and this had to be the easiest, fastest, most inexpensive and yummiest ice cream recipe ever! The only addition I made was adding a few teaspoons of tiny diced candied ginger left over from another peach recipe. I'm making gallons of this stuff to share.

Braised Balsamic Chicken

Quick and easy! The mixture of the balsamic vinegar and tomatoes, along with the spices, made a kind of barbecue sauce (and because the edges of my pan "burned" a bit, it even had a slightly smoky flavor -- in a good way). Definitely a keeper for those "gotta get dinner on the table quick!" nights.

Kathy's Delicious Whole Slow Cooker Chicken

I'm on a slow cooker kick and this was a very simple recipe and easy to throw together before leaving for work. I followed the recipe to a "T" and agree with one of the reviewers who found that there might be too much oil. (Could also be that I was too lazy to de-skin the bird and that added to the greasiness.) Pepper and ginger would probably add a little zing. Overall, the bird turned out delicious and even better, it was easy!

Hungarian Goulash II

This was my first time using my crockpot and I'm very happy to say it was a success. I didn't mess with the recipe (adding tons of other ingredients is, in essence, creating a new recipe!). Since I'm not a morning person, I chopped everything up and mixed everything the night before and threw everything in the pot in the morning, turned it on and ran out the door. As soon as I got home, the aroma hit me and my tummy growled. It was delicious as a sort-of stew (pre-flour mixture) but was even better thickened. I might have to try using this as a base for stew and add some chopped tomatoes and see what happens. I can't wait to try more recipes (that don't just use canned soups!). Keep these recipes coming!!!
