Orange White Chocolate Chip Beltane Cookies

SO yummy, but I do recommend adding some orange extract - a tablespoon or so - if you really want to taste the orange.

Peanut Butter Thumbprint Cookies I

i doubled the recipe, planning to use it as hostess gifts. that should have made 6 dozen according to the recipe, but i only got about 4 1/2, which wasn't enough. also, i found the texture dry and not peanut butter-y enough. it was ok, but i wouldn't use this recipe again.

Double Chocolate Mint Cookies

These cookies are delicious and fun. A bunch of reviews that i read said to decrease the amount of shortening, so i used about half a cup less - but i think it would have been better if i had left it all in, i think they needed the moisture. i like chewier cookies, and these were a little crisp - but the extra shortening might have remedied that. i guess if you like soft cookies, use the whole amount. also, i would just put two teaspoons of peppermint extract instead of one mint and one vanilla. i added some crushed peppermint candies too.

Jelly-Filled Muffins

These were pretty good. i loved the nutmeg, i'm a nutmeg fanatic. But there was a slight baking powder taste (maybe add just a little less), and there wasn't enough batter to really fill the cups, so in some the jelly sank all the way to the bottom. I used strawberry preserves.

Whole Wheat Snickerdoodles II

This recipe is delicious. The cookies are soft and chewy and light. I added a smidge of cream of tartar as per people's suggestions, but i think it probably wasn't necessary. The main thing i did differently was use McCormick Chai Spice Blend instead of cinnamon - it gives the cookies a bit more of a kick!

Mocha Chocolate Chip Banana Muffins

These muffins MELT IN YOUR MOUTH! I made them with 1 cup of whole wheat flour and the rest white, and 1/4 brown sugar and the rest white. and they are completely fab! i will SO make these again!

Cinnamon Rolls II

These buns were AMAZING! I had to add a little extra flour because the dough seemed a little too sticky to work with, but i LURVED them, and so did my husband. SO fluffy and gooey, and not at all hard! Anyone who's afraid of yeast dough should try these, you'll never fear it again.

Gramma's Easy Peanut Butter Fudge

I used soy milk and margarine in this recipe, as i wanted a nondairy version, and it worked beautifully. I also used chunky peanut butter and sprinkled chocolate chips on top, and think it came out really well. it is very sweet, but it melts in your mouth! i used both the thermometer and testing in water to make sure i was at the right point. oh, and for the record, 2 pounds of sugar is about 4 and a half cups!

Zucchini Muffins

I tried making adjustments according to people's recommendations and it just didn't work. There was this bitter taste that I think was a result of the recipe calling for too much baking powder. And they were very sticky, it took much longer than 20 minutes for them to bake through properly. I would not even bother trying to fiddle with this one; just find a different recipe.

No Fail Chocolate Fudge

This fudge is creamy and delicious. I made it nondairy, with soy milk and margarine, and that worked just fine. If you're working alone, lay out and measure the ingredients before you start, so you can stir everything in at the end before it has a chance to cool. I also put rainbow sprinkles on one batch (pressing them in slightly), and mixed chopped walnuts into another, and both worked beautifully.

Canadian Molasses Cookies

These are delicious, if you like a strong molasses taste. I did add more like 2 1/2 cups of flour, the dough was very sticky. Refrigerating it might help with that.

Spiced Peach Oatmeal Muffins

These weren't completely awful, but I could have done so much better. I added salt and extra spices like everyone suggested, but they were still bland and sticky. If you do want to try them, add more sugar as well.

Grain and Nut Whole Wheat Pancakes

These are delicious and healthy. I love that no white flour is involved, but they aren't heavy or heavy-tasting. A great way to please your kids without sacrificing nutrition. I did add an extra egg and applesauce instead of oil, plus some vanilla and chinese 5 spice powder for flavor.

I used half brown sugar (and olive oil, b/c i was out of canola!) and it was fab. I could have done half whole wheat and still had perfect results. Moist, sweet, and delicious.

Yum, and SO easy. A great recipe to make with kids - you can sub in whatever fruit or chips or nuts you want. Definintely lower the cooking time a bit though.

Cathy's Peanut Butter Fudge

SO smooth! It helps to have a second pair of hands to help with the final stages, or at least to measure everything out ahead of time so all you have to do is grab and dump. But this didn't take long and it came out delicious!
