Spaghetti Carbonara II

This was very good. I mixed the eggs and cheese together before puring on pasta as another reviewer suggested. Used 1 pound of bacon and used 2 egg yolks plus one egg. Also added about 1/2 cup pasta water at the end to thin the sauce a bit.

Seven Layer Taco Dip

Very good. We left out the lettuce and green pepper. Put refried beans on the bottom, for the next layer we combined sour cream, cream cheese and taco seasoning per others suggestions. I also put the salsa in a strainer for a few minutes before adding to the dip, which helped to keep the dip from getting watery as it sat.

Whipped Cream Cream Cheese Frosting

I used this to decorate the top of a strawberry cheesecake. Looks and tastes great. Held up very well, even though the cake was sitting on a table for a few hours. Great decorator icing, nice alternative to whipped cream.

Zippy Shepherd's Pie

Great Recipe! I left out the bell pepper and tomato. I put everything in an 11 x 7 dish, and topped with 2 pounds of mashed potatoes (used real, ready made garlic mashed potatoes from the refrigerated section of the grocery store)...it saved time and tasted great!

Chicken Piccata II

Excellent! I doubled the sauce & flour mixture per others suggestions, and cooked the chicken & sauce separately. Added 8 oz. of sliced mushrooms (sauted first), and 3T. of capers to the double recipe of sauce. Served the chicken, topped with sauce on a bed of thin spaghetti noodles tossed with fresh garlic & olive oil..steamed asparagus on the side. Beautiful presentation.. this one is a keeper!

Caramel Apple Pork Chops

Very good.I Sprinkled chops with garlic salt, pepper & sage before browning them in a skillet on high heat for about 1 minute per side. While making the apple sauce, I finished cooking the pork chops in the oven,uncovered at 400 degrees for 12 minutes. They were very tender. I also tripled the sauce. Had enough left over to use as a topping for vanilla ice cream for dessert. The whole meal was a hit.

Peppermint Brittle

Great Recipe. Here's a suggestion. After crushing the peppermint candies, put them in a sieve. All of the peppermint "dust" gets stirred into the melted chocolate to flavor it. After it is poured into the pan, sprinkle the bigger pieces on top. It looks really pretty! I also like to drop a few spoons full of melted milk chocolate (or semi-sweet if you prefer)into the white chocolate after it is poured into the pan, them swirl it with a knife and and sprinkle pieces of peppermint on top. It looks like the Peppermint Bark that you buy in specialty shops!
