Holiday Pumpkin Bread

Strawberry Pineapple Bread

I thought this was delish. I left out the nuts since I don't care for them. I put in the whole can of pineapple, very well drained. I used about 1 1/2 cups chopped frozen strawberries that I partially thawed, rinsed and drained to get rid of any extra water since they were a little frosty. Because I had added a little extra fruit, I cut the oil down to 3/4 cup which still seemed like oodles. I also sprinkled raw sugar on top before I popped it into the oven. This was a hit with my Bible Study group and my reputation as "the good cook" in the group remains intact!

Zucchini Brownies

These are great. I usually add more zucchini, but other than that I just follow the recipe. When I'm lazy a can of frosting works just as well.

Cinnamon Rolls III

I have made these rolls twice. They are great. I mix the dough in my bread machine and like to make half raisin and half pecan, slicing each half into 9 rolls and baking in 2 8" square pans. I baked the first batch right away, but the second batch I made the night before, covered with a linen and put in the fridge overnight. I let them rise about 45 minutes before baking them the next day. Both batches turned out great. I made my own frosting, so I can't vouch for that, but the dough is yummy.

Sweet Corn Bread

I doubled the sugar just because my hubby likes cornbread real sweet. I had to bake it about 30 minutes even with a preheated oven, but it turned out very moist and yummy. We used 2 c. white corn meal mix in place of the corn meal, flour, baking powder, and baking soda, because it is what I had on hand. If you have the mix, don't hesitate to try this recipe it was great.

Microwave Caramel Popcorn

I use a nearly identical recipe in class with my students. They are 11-12 years old and just love making this! I usually have each group of 3-4 kids make a recipe that is about half of this one. We only cook the popcorn in the bag 30 seconds at a time and heat it twice. That may cut down on the burnt popcorn issue. We also make sure to shake it for a full minute each time and coat the bottom part of the bag with cooking spray first. Enjoy!

Sugary Orange Peel

This is time consuming. Even more than the directions lead one to believe, but worth it. These are delish! My mom started making them to serve on our christmas cookie tray and now I have made them too! I don't dip them in chocolate, just eat it like candy, but it is also really good cut into bits and used on top of a frosted cake!

Chicken and Biscuit Casserole

I made some minor changes like using frozen peas, and biscuits from a can, based on what I had on hand and was a bit quicker, but this was delish! I am a picky cook and my hubby is a picky eater and we both really enjoyed this. The basil just perfects this dish.

Cowboy Oatmeal Cookies

Great cookie, but really need an extra cup of oats. I really like them with raisins or chocolate chips. Don't overbake them they are good a little soft.
