Baked Falafel

I skipped the whole pan-frying step, and just baked them in my oven on a Silpat. The outside was crisp, and the inside was tender. Great flavor! I doubled the recipe so that I could have enough for lunch the next day. I did add double the amount of coriander, but that is just my own preference.

Yum! Very refreshing. I substituted red onion and green pepper b/c I didn't have green onions or red peppers. I was pleased with the result. Great way to eat your veggies.

Summer Corn Salad

Delicious! Such a fresh tasting salad. I halved the amount of olive oil and was satisfied. I think it would be too oily if the entire amount is used.

Homemade Flour Tortillas

Delicious! The tortillas were on the small side even when I rolled them out as thin as I could. Slightly dry. Next time I will add more water or a tiny bit more shortening, but overall these beat store bought tortillas any day!

Roasted Spring Vegetable Risotto

I did not have all of the vegetables called for, but the green onions, yellow squash, and asparagus were plenty. I added some leftover pieces of glazed ham. Yum! We will definitely make this again!

Buffalo Chicken Sloppy Joes

I am so happy to find a recipe that uses ground chicken! The sauce was good but not very spicy. Next time I will add more buffalo wing sauce. I omitted the cheddar cheese because I didn't want it to be too cheesy flavored. After topping it with the blue cheese crumbles, I also sprinkled French-fried onions on top to give it a nice crunch. Yum! Thanks for the recipe.

Thai Chicken Bites With Dipping Sauce

Wow! This was delicious. My husband and I took the advice of other reviewers and turned this into a main dish. We decreased the amount of chicken breasts to 2, but used the same amount of dry seasonings. Great flavor! I added extra chicken broth and a little lime juice to thin the sauce and served over rice and vegetables. Delicious!

Flavorful Tomato Soup

Moroccan Tagine

Absolutely delicious! And simple too. I boiled my chicken chunks in the broth, and then added all of the vegetables and spices to save time. The chicken was tender and flavorful this way. As per other reviews, I added 1 tsp. of cumin and 1/4 tsp. of cinnamon. I topped each serving with a handful of fresh cilantro for added color and pizazz.
