Rich Italian Sausage and Potato Soup

Great soup - whole family loved it!! For extra flavor, definitely use the Spicy Italian sausage, plus I added an extra bouillon cube, Italian seasoning, Garlic salt, and Seasoned pepper, then served with a pinch of shredded parmesan cheese on top.

Slow Cooker Italian Chicken Alfredo

Very delicious; I added a pinch of season salt and 1 Tbsp Italian seasoning when I stirred in the soup and cheese. Served it over bow tie pasta - really yummy, enjoyed by all the kids and hubby!

Halibut Weaver

Wow - this was great, and I don't even care much for Halibut. My kids who aren't fish fans ate this up! Next time I will try to reduce the sauce though, maybe half the portion as it is a ton of fat and calories, but so yummy!

Grilled Lime Cilantro Ahi with Honey Glaze

Very delicious - I also omitted the glaze as my husband does not like "sweet", and added an extra clove of garlic to the marinade. The fish turned out very moist and flavorful - definitely will make this again!

Yummy Pork Chops

Wow! I was skeptical, but they were great! Definitely add the onion to bottom of pan under the chops as others suggested, then when thru, remove the chops and saute broccoli or other fresh veggies for a complete 1-pan meal!

Blackberry Cobbler II

This is the greatest cobbler! I cut back the sugar in berry mixture to 3/4 cup, and added about 1 tsp cinnamon to this mixture - perfect for my husband who likes a not-too-sweet dessert, and for me with a big sweet-tooth!

Slow Cooker Chili II

This was delicious! My whole family loved it, I followed the recipe with just a few exceptions... instead of adding the liquid from the beans, I drained off; added 2 14-oz cans of diced tomatoes (with liquid), just 1 can of puree, and a 12-oz can of beer. Then I doubled all the seasonings, just because we like it very flavorful. Definitely a keeper!

Easy Spicy Chicken and Rice

A surprisingly good base recipe; I had a slightly smaller can of ROtel (10 oz. I browned my chicken breast pieces first in PAM cooking spray, then mixed together the soup, ROtel, 1 cup long grain rice (NOT instant), plus 1 large cube of Knorr chicken boullion, 1-1/2 cups water, then spiced it up a little with cumin, minced onion, season pepper and garlic salt. Pour all this on top of the chicken, bring to boil, then cover and simmer about 25-30 minutes.

Chile Rellenos

These were very yummy - I impressed myself with my first attempt at chile rellenos (lol - I'm a gringa!!) I simplified the batter per other reviews - just egg (separated, whip the whites then fold in yolk with 1 Tbsp flour and milk). Will definitely do this again - thanks panchita!!

Impossible Cheeseburger Pie

Great comfort food - easy and quick recipe to put together. We add the shredded cheese into the meat/onion mixture, and skip the tomato, but still delicious! Kids eat the whole pie - no leftovers!

Southern Peach Cobbler

Very tasty, BUT I too, got a soggy mess. I think next time the peaches should be close to drained (very little syrup) AND maybe 1/2 cup milk. I knew putting the batter in the dish that it would not puff up and turn cakey - the batter was just too thin. THen with all the peach syrup on top (even though I held back quite a bit) it was just too soupy. Great taste though!

Garlic Chicken

hmmm, I thought this would be better. It was ok, but actually pretty bland. I used 2 Tbsp of garlic, not 2 tsp, but it just wasn't that garlicky. I'll try again adding more seasonings to the coatings.

Three Pepper Chicken

Good recipe, but needs spicing up. Definitely pound the chicken breasts or finish off in the microwave after browning, like I did and it turned out fine. I also used Panko breadcrumbs with lots of Italian seasoning, garlic salt and pepper which helped. I also recommend doubling the butter and the chicken broth/flour mixture.

Glazed Peach Pie

My pie never got firm, despite double checking the ingredients, boiling the cooked portion an extra 5 minutes and chilling overnight. It tasted good, but was more like "Peach Soup in a Crust" than pie. Perhaps my peaches were extra juicy - a word to the wise if you too get really juicy peaches.
