Citrus Broiled Alaska Salmon

Reviewed: Jan. 29, 2009
I followed recipe to the letter, but just did not get much flavor at all; I think marinating the salmon in juice for up to 30 minutes would definitely improve the flavor.

Marinated Pot Roast

Reviewed: Feb. 22, 2009
I did not care for this recipe - the meat turned out extremely dry, even though I cooked it the minimum amount of time. The flavor was just ok, a little bland.

Blackberry Cobbler II

Reviewed: Jun. 20, 2009
This is the greatest cobbler! I cut back the sugar in berry mixture to 3/4 cup, and added about 1 tsp cinnamon to this mixture - perfect for my husband who likes a not-too-sweet dessert, and for me with a big sweet-tooth!

Glazed Peach Pie

Reviewed: Jul. 2, 2009
My pie never got firm, despite double checking the ingredients, boiling the cooked portion an extra 5 minutes and chilling overnight. It tasted good, but was more like "Peach Soup in a Crust" than pie. Perhaps my peaches were extra juicy - a word to the wise if you too get really juicy peaches.

Grilled Lime Cilantro Ahi with Honey Glaze

Reviewed: Jul. 29, 2009
Very delicious - I also omitted the glaze as my husband does not like "sweet", and added an extra clove of garlic to the marinade. The fish turned out very moist and flavorful - definitely will make this again!

Chile Rellenos

Reviewed: Aug. 28, 2009
These were very yummy - I impressed myself with my first attempt at chile rellenos (lol - I'm a gringa!!) I simplified the batter per other reviews - just egg (separated, whip the whites then fold in yolk with 1 Tbsp flour and milk). Will definitely do this again - thanks panchita!!

Peppery Beef Stir-Fry

Reviewed: Sep. 28, 2009
This was very delicious - I made exactly as written, with an extra clove of garlic. Great over rice - lots of flavor in the sauce.

Yummy Pork Chops

Reviewed: Dec. 9, 2009
Wow! I was skeptical, but they were great! Definitely add the onion to bottom of pan under the chops as others suggested, then when thru, remove the chops and saute broccoli or other fresh veggies for a complete 1-pan meal!

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Apr. 28, 2010
The sauce is rather sweet, and low on flavor, also the chicken was definitely overcooked and a bit dry. I used a 4.5 lb. chicken, cooked on high 4 hours and low for 1 more hour. I followed recipe to a tee, and was surprised there was not more flavor given the ingredients. The kids liked it, my husband did not, and I thought it was just so-so.

Southern Peach Cobbler

Reviewed: May 20, 2010
Very tasty, BUT I too, got a soggy mess. I think next time the peaches should be close to drained (very little syrup) AND maybe 1/2 cup milk. I knew putting the batter in the dish that it would not puff up and turn cakey - the batter was just too thin. THen with all the peach syrup on top (even though I held back quite a bit) it was just too soupy. Great taste though!

Halibut Weaver

Reviewed: Aug. 4, 2010
Wow - this was great, and I don't even care much for Halibut. My kids who aren't fish fans ate this up! Next time I will try to reduce the sauce though, maybe half the portion as it is a ton of fat and calories, but so yummy!

Caper Baked Chicken

Definitely a winner! The sauce is so delicious, I will save the leftover next time to serve over rice for another meal.

Remarkable Fudge

Reviewed: Dec. 21, 2010
This recipe has about 4 times the butter called for in most fudge recipes?? Mine never got to the required heat, despite over 30 minutes of cooking and using direct heat after the double boiler wasn't doing the trick. I refrigerated it over night, but it never firmed up. Good flavor, but an unsuccessful fudge recipe.

Slow Cooker Chili II

Reviewed: Feb. 15, 2011
This was delicious! My whole family loved it, I followed the recipe with just a few exceptions... instead of adding the liquid from the beans, I drained off; added 2 14-oz cans of diced tomatoes (with liquid), just 1 can of puree, and a 12-oz can of beer. Then I doubled all the seasonings, just because we like it very flavorful. Definitely a keeper!

Three Pepper Chicken

Reviewed: Sep. 13, 2011
Good recipe, but needs spicing up. Definitely pound the chicken breasts or finish off in the microwave after browning, like I did and it turned out fine. I also used Panko breadcrumbs with lots of Italian seasoning, garlic salt and pepper which helped. I also recommend doubling the butter and the chicken broth/flour mixture.

Garlic Chicken

Reviewed: Aug. 5, 2012
hmmm, I thought this would be better. It was ok, but actually pretty bland. I used 2 Tbsp of garlic, not 2 tsp, but it just wasn't that garlicky. I'll try again adding more seasonings to the coatings.

Absolutely delicious - I used blackberries which is what I had on hand, but I look forward to trying with blueberries.

Easy Spicy Chicken and Rice

Reviewed: Oct. 21, 2012
A surprisingly good base recipe; I had a slightly smaller can of ROtel (10 oz. I browned my chicken breast pieces first in PAM cooking spray, then mixed together the soup, ROtel, 1 cup long grain rice (NOT instant), plus 1 large cube of Knorr chicken boullion, 1-1/2 cups water, then spiced it up a little with cumin, minced onion, season pepper and garlic salt. Pour all this on top of the chicken, bring to boil, then cover and simmer about 25-30 minutes.

Slow Cooker Italian Chicken Alfredo

Very delicious; I added a pinch of season salt and 1 Tbsp Italian seasoning when I stirred in the soup and cheese. Served it over bow tie pasta - really yummy, enjoyed by all the kids and hubby!

Tilapia Scaloppine

Reviewed: Oct. 24, 2013
My husband and I thought this was just terrific! Super easy, and very sophisticated flavor. The kids... well, not so much! But something I would be happy to serve to company.
