Stuffed Zucchini with Chicken Sausage

I make a variation of this recipe. This is a great way to use those giant zucchinis you didn't see growing in the garden. I cut in half, scoop out the seeds and nuke for a couple of minutes to soften a but. Then stuff with sausage. Put in casserole and top with stewed or crushed tomatoes and cheese and bake until zucchini gets soft, around 30-45 minutes. Not a favorite of my husband's but he'll eat it. I have assembled this the night before and baked when I got home from work.

Ham and Cheese Breakfast Tortillas

Our 4th grade Girl Scouts made them on our camping trip and the girls loved them. We added diced frozen potatoes and had diced green pepper available. The girls could add whatever ingredients they wanted. We also used bacon. I've made them at home since and they are a hit. Have a little leftover bacon, ham, potatoes from another meal - make a burrito.

Ham Croquettes

I made these with our leftover holiday ham. I used the food processor to cut up the ham into a consistency where we would have pieces of ham but not chunks. I omitted the garlic (not garlic lovers) and fried in olive oil and 2 tablespoons of butter. I used panko breadcrumbs for the outer coating. Recipe made 9 nice-sized patties. They were delicious. I will definitely make these again.

Mama's Summer Squash Casserole

I didn't pre-cook squash. I added slices of pre-cooked Italian sausage and a grated carrot to make it a complete meal and used Club crackers. My husband loved it and said it was one of the best 'from the garden' recipes I've ever made! The dogs eat the leftovers and devoured them.

To Die For Blueberry Muffins

These muffins live up to their name. They are delicious and disappeared quickly. I made them the day I lost my 16-year old Jack Russell, Buddy, so we call them "Buddy's Muffins". When I take them into work, the girls all rave about "Buddy's Muffins".

Goulash Supreme

It is a perfect winter dish, warm and filling. We put grated cheese on top. I use half pound of ground beef and half a pound of sausage. Easy dish to make.

Blueberry Muffins

Great recipe and delicious muffins. I did half white/half wheat flour, eliminated the lemon juice and used a cup of milk (not lemon lovers) put in more blueberry because we're having a bumper crop this year and sprinkled some brown sugar on top. The recipe made 15 muffins. I made them this morning. 6 are left and there are only 3 of us in the family.
