Sweet and Spicy Green Beans

Creamy PHILLY Pesto Chicken

Amazing! Delicious flavor and so easy it takes minutes to prepare. Whenever I serve this (which is weekly) there is a rare period of silence at the table. With a 6yo, 4yo and 2yo it's almost impossible to make something EVERYONE including the adults love. I tried fat free cream cheese once and it was harder to get it to melt nicely. We stick with 1/3 less fat now. I also double the sauce and serve with pasta. Amazingly delicious. Never any leftovers.

Baked Pesto Chicken

Wow! I marinated this for 24 hours in the pesto. Then I used JACKROX suggestions and used sun dried tomatoes and feta instead. My kids ate this like it was going out of style and it was easy and delicious. A definate keeper!

Chicken Breasts in Caper Cream Sauce

WOW! The flavor of this dish is really amazing. I used tarragon instead of dill because I really don't like dill. I find taragon subs pretty well in most cases. I did deglazed with about 1/4 cup chicken broth and added most of the seasonings to the sauce instead of the chicken. Hubby even asked about the recipe and the kids ate a bit more than usual (which is really saying something!) This will be in the usual rotation for it's simplicity and wonderful taste. Fast and delicious, thank you for sharing!

Sauteed Swiss Chard with Parmesan Cheese

This dish is fantastic! After 2 years of neglect and finally a wet spring we are swimming in swiss chard that has reseeded and taken over. This makes eating it all a treat even after all these weeks.

Herb Roasted Pork

This is fantastic! I used the suggestions by Tina. At the last second I switched it up by using a really good balsamic vinegar and I am so glad I did. The flavor of the sauce was incredible!

Tender Pork Roast

After reading the reviews, I cut down the soy sauce to 1/2 cup. I can't comment too much on the taste, since I didn't really get to try much. DH, my 4 year old and picky 2 year old ate almost all of a 2 lb roast before I ever got home from work. What I did try was DELICIOUS. Crock pot meals are a necessity in this house but so many are a flop. This was very yummy and also easy. We will make this again!

Salisbury Steak

YUM! I used Ally99s suggestion about the sauce. I was worried it would be too salty so I used 25% less sodium cream of mushroom soup. I also left out the ketchup altogether, I'm just not a fan and didn't really think it needed it. We will be having this regularly.

Old-Fashioned Cheese Potatoes

One of the few times I made a recipe with no changes. Absolutely perfect and really pretty easy. We always fight over the leftovers. My only caution is it this dish is really addictive!

Pasta with Blue Cheese and Walnuts

I gave this 5 stars even though hubby didn't really care for it. I think you need to be a real lover of blue cheese to love it. I did make a few modifications. I mixed 1 tbs of flour with 1/4 cup of chicken broth, then added the remainder of the can to the garlic and walnuts. Then I stirred in the flour and broth and ooked until it made a nice sauce. I'm a sauce junkie. I used it over Ronzoni wheat pasta and the sauce really holds it's own even with the wheat pasta.
