Gingerbread Waffles with Hot Chocolate Sauce

This is a unique waffle that tastes great! As another reviewer stated, they do crisp on the outside until they are quite hard, but I used a belgian wafflemaker which I think enabled the waffle to be thick enough to still be nice and soft on the inside. Otherwise, I would say eat them right away, as they are very soft when warm.

Honey Wheat Sandwich Rolls

Awesome recipe! These taste just like the refined version of yeast rolls found in restaurants. I crave these! The dough is super easy to work with too. I didn't roll them out, just pinched and formed into rolls. Serve with honey butter and use the leftovers for sandwiches!

Angel Hair Pasta with Shrimp and Basil

Wonderful recipe! I will *never* be buying canned pasta sauces again! I left out the shrimp because I didn't have any (long story) and added a little red pepper. I also only used 28 oz. of tomatoes, but if you are serving several people you should probably use it all.

Oranged Cranberry Sauce

Good recipe! Family was amazed you could actually make cranberry sauce from scratch. I'm all for home cooked food, but I did find resistance from others when trying to get them to eat cranberry sauce that wasn't from a can.

Libby's® Pumpkin Pecan Pie

Great tasting pie. Great reviews from dinner guests. It wasn't two layers as in the picture with the recipe (which I wanted). I expected a pumpkin layer and then a pecan pie type layer, but the layers blended together and essentially it tasted like a pumpkin pie with pecans on top. But, it was very good and I will make it again.

Green Bean and Mushroom Medley

This is a wonderful dish! I think the carrots are a lovely addition. I did however drastically cut the salt by using only the seasoning salt, plain garlic powder, and no plain salt. A beautiful side dish with a very simple preparation.

Apple Crisp I

I was looking for an apple crisp recipe similar to what I had growing up, but this wasn't it. It was good though, just not what I was looking for. This tasted just like oatmeal cookies with apples -- a great combination. I think it would be good with raisins in it!

Pan Fried Green Beans

After the positive reviews I'm not sure what went wrong here. Was there supposed to be oil in the pan? I just ended up with a smoky mess. If someone can fill me in on what went wrong please do, this sounded like such a good recipe! I'd love to be able to change the rating.

Pizza Crust I

With all the positive reviews, I'm not sure what went wrong here. There wasn't enough flour, I had to add quite a bit more. The baked product was quite bland and could use something more. But, it certainly was easy!

Chicken Enchiladas I

This was my first time making enchiladas and they turned out great! My husband raved and asked for leftovers for lunch for two days. I omitted the water and halfed the tomato sauce as was suggested by other reviews. I think next time I will try adding veggies such as brocolli and corn.

Fried Okra

Although not very healthy, (I just keep telling myself it's a green vegetable, so it IS healthy! lol) this recipe is definately simple southern cooking at its best. I think next time I'll not slice my okra quite so thinly so I can taste more okra flavor instead of mostly oil. My grandma always cooked summer squashes (yellow or zucchini) and mushrooms this way and they are so good also.

Baked Oatmeal I

Great recipe! My 2 year old won't touch it, but she doesn't like oatmeal anyway. But I like it! It is a lot more grainy, and less mushy than most oatmeal recipes, which appeals to me. I substituted applesauce for the oil. I have made it with raisins and without, both great. I usually serve it with apples or pears.

Brown Sugar Meatloaf

This is the most amazing meatloaf recipe. I have never liked meatloaf, but find myself craving this! My husband actually went to work and argued with a coworker over whether his wife had a better meatloaf recipe. Even my 2 year old daughter asked for seconds! Oh, and we love ginger here, so I usually add just a bit more ginger and freshly ground pepper than the recipe actually calls for to spice it up a little.
