Fiesta Cheese Rice

This was the first recipe that I've used for rice like this. I will be using it again! I used three c. chicken broth and no water and added a little fresh cilantro. I made it for my parents and my brothers and everyone loved it! They'll all be making it too! Thanks for an excellent recipe!

Microwave Corn on the Cob

I was at my parents for dinner a week ago and my Mom just showed me that for a while now, she's been cooking their corn on the cob in the microwave... I was shocked! It's PERFECTION! I put four ears, cleaned and bare, in a gallon size baggie. Seal the baggie closed leaving a tiny spot open for very little steam to escape, I cook the four ears for 8 minutes in my microwave and they are wonderful! I will probably never boil my corn again!

Garden Vegetable Salad

This is the recipe I've been making for a while now but, I do cheat and use a store-bought Country or House Italian dressing! It's great and even better after a couple of good hours in the fridge!

Strawberry Lemon Trifle

I have made something very similar to this for years and I love it! I use the store bought angel food, one layer of fat-free vanilla and one layer of fat-free lemon pudding, fresh blueberries and fresh strawberries. Very, very good and very low in fat!

Olive Balls

I actually make these with plain cream cheese, green olives, and chopped walnuts! Great!! As someone else said, just make sure to dry the olives very good!

Easy Chicken Enchiladas

This was really good! I had some chicken/cheese enchiladas at an authentic restaurant a week ago and really wanted them again. This recipe was the closest I found! I did not use the chilis, (just didn't have them on hand), but did add some chili/taco seasoning to the chicken when I cooked it and again when I made the filling mixture. However, I had MORE than enough filling and I was generous with it so, next time, I'll know to get more tortillas. Since I had so much filling, I made a couple with some salsa, green pepper, and extra onion. Both were good. Thanks for sharing!
