Mini Ham And Cheese Rolls

I have been making these sandwiches for years - we call them "tailgate" sandwiches! Everyone asks for them. A few changes - I use brown mustard, a little butter, fresh minced onion, teaspoon of worcestershire sauce and poppy seeds for the sauce. We wrap them in foil and load them up in a low heat grill, a roaster or in the oven and let cook until the cheese is hot and bubbly. They are perfect for parties!

Creamy Turnip With Paprika Soup

Reallllly Good!!! I added 1/4 head of cabbage to the turnips and onion because I needed to use it up then followed the directions. Topped with a dollop of sour cream and the scallions. Soup is delicious!!

Caprese on a Stick

These were awesome. I took them to a wine tasting party. Only thing different I did was add a splash of balsamic. Every one LOVED them and they look so pretty on the platter.

Succulent Pork Roast

This was really good. I make the same think with pork roasts - either sauerkraut or pulled pork. So this was a nice change. The whole family enjoyed it. I did substitute a can of pitted sweet dark cherries for the maraschino cherries (didn't have those on hand). The dark reds lent a very deep flavor to the roast. I did salt my roast lightly before hand. Will make again.

Red Broccoli Salad

Garlicky Baked Butternut Squash

PERFECTION!! I am a low carber and I made this at Thanksgiving because I wasn't eating the Sweet Potatos. It was so delish I barely got any...whole family devoured it!

This was a realy good soup. I did add turnips to the mixture. I'm a low carber and use turnips in just about everything! I also used Lite cocunut milk and added some crushed red pepper. Delish!

Peanut Butter Vegetable Chicken Soup

This was really good. I took the suggestion of sauteing my onion, celery and garlic in olive oil first. I also added 1 cup of white wine and cooked my chicken breasts in the soup for 3 - 4 hours and shredded it in the soup. I think cooking the chicken in the soup just gives everything more flavor. I also added a cup of cubed acorn squash, a little red pepper flakes for some heat and a teaspon of lime juice to brighten the flavor. This was a really good soup. We served it with couscous with golden raisins. We ended up mixing our couscous into our soup bowls and the sweetness of the raisins was really good! I will definitely make this again.

BBQ Chuck Roast

This is a great recipe. I was craving roast but it's Summer so I didn't want to fix something heavy. This was the purfect answer! I did overcook it a bit. Cooked it to 160 degrees and meant to only take it to 145 as I like my beef rare and DH likes his medium - with resting time I think 145 would have been perfect. My fault but still declicious. Due to size of roast there were still some pink spots. Next time I'll watch the temp. a bit closer. Great Summer roast recipe! Thank you Ahmad!

Roasted Beets and Sauteed Beet Greens

These beets were delicious right out of the oven. I sliced a few and ate them as is and cubed a few, sprinkled with crumbled goat cheese and toasted walnuts. Great salad!

Mahogany Chicken Wings

Ohhh sooooo good! This recipe is fun and forgiving. I didn't have molasses either but used maple syrup instead. Added a couple drops of hot sauce too. I cut chicken breasts into strips and marinated them in this for 3-4 hours. Baked them off in the oven and served with rice and steamed snowpeas. You must try this recipe!

Chinese Chicken Salad II

My Mom makes a salad very similar. I was craving it and couldn't get a hold of her to get the dressing recipe. Found this and it is so similar. Absolutely delicious! I made a few changes to mimic my Mother's recipe. Used Napa Cabbage and added sliced red peppers, mandarin oranges,bamboo shoots, sliced English cucumbers, omitted almonds and added toasted sesame seeds. Dressing was spot on! I did add a bit of apple juice to dressing because I didn't have apple cider vinegar and wanted that kick but absolutely perfect!!!! Yummmm! The whole family loved this!

Beer Butt Chicken

This was sooooo moist and delish! I did soak the bird in beer and onion and garlic all day. Then stuck it up there on that beer can to cook in the stove @ 350. Basted it once with a mixture of melted butter and honey mustard. Juice was dripping from the breast meat! Keeper!!!

Caribbean Sweet Potato Salad

I made this for my husband who never likes anything new and he really enjoyed it! I did like some of the other reviewers said and kicked up the spices, mustard and lime juice a bit for some extra flavor but this is a very good base of a recipe!

Curry Pumpkin Soup

I'm a low carber so pumpkin is a dream food. So many things you can do with it. I didn't use any flour and used splenda in place of the sugar. It was scrumptious!

Pat's Dumplings

These are fantastic dumplings. Traditional and old fashioned - not at all like the puffy bisquick dumplings. I made these substituting the salt for garlic salt. I did need to increase the water to about 3/4 cup. Rolled out just fine and cut nicely. Yummy!

Roasted Vegetable Lasagna

This is so good! I did a half/half lasagna. My husband's half had meat on it and mine had veggies only. I only use Annarinos sauce and Barilla lasagna noodles! You'll love this one!

Hot Sweet Onion Dip

We call this Cuppa Cuppa Cuppa! Everyone loves it including your biggest onion hater! I serve mine with toasted baguette slices. You can't go wrong with this one!
