Beer Butt Chicken

Reviewed: Jul. 30, 2012
This was sooooo moist and delish! I did soak the bird in beer and onion and garlic all day. Then stuck it up there on that beer can to cook in the stove @ 350. Basted it once with a mixture of melted butter and honey mustard. Juice was dripping from the breast meat! Keeper!!!

These beets were delicious right out of the oven. I sliced a few and ate them as is and cubed a few, sprinkled with crumbled goat cheese and toasted walnuts. Great salad!

Classic Macaroni Salad

Reviewed: Apr. 7, 2012
The perfect base to a classic mac salad! I did cut back on the sugar and actually substituted with splenda, used apple cider vinegar instead and added chopped green olives instead of just the pimentos. Delish! Thanks!!

Curry Pumpkin Soup

Reviewed: Apr. 6, 2012
I'm a low carber so pumpkin is a dream food. So many things you can do with it. I didn't use any flour and used splenda in place of the sugar. It was scrumptious!

Orzo and Rice

Reviewed: Apr. 6, 2012
This is a really good "base" recipe. I used half white wine/half water. Deglazed my pan with the wine and then added my water. Added onion and garlic to the mixture and added some pancetta, green peas and shaved parmesan at the end. Really good. Add whatever you like to the base!

These are pretty good. I did make some changes. Sauteed my onions with garlic before adding and used turkey and ground pork. Replaced the bread crumbs with an egg because I am a low carber. Delish!

Pesto Cheesy Chicken Rolls

Reviewed: Aug. 5, 2011
I rated this 4 stars only because I had to make a few adjustments to turn it into a 5 star recipe. I marinated by pounded chicken breasts in Italian dressing all day. Used fresh buffalo mozzarella cheese and sprinkled fresh grated parmesan romano cheese on top before baking. I served with spaghetti squash and marinara sauce. I live a low-carb life so this was perfect!

Awesome Broccoli Marinara

Reviewed: May 10, 2011
I made this with fresh tomatoes and fresh basil. It was pretty good. Added cubed fresh buffalo mozzarella at the end of cooking, gave it a quick toss and served with grilled chicken. Hubs and I both enjoyed. Nice to enjoy broccoli a little different.

These were awesome. I took them to a wine tasting party. Only thing different I did was add a splash of balsamic. Every one LOVED them and they look so pretty on the platter.

Grilled Bacon Jalapeno Wraps

Reviewed: Jan. 5, 2010
These were pretty tasty BUT you do have to be very careful with the bacon on the grill. The flat will flame up on you fast!

Caribbean Sweet Potato Salad

I made this for my husband who never likes anything new and he really enjoyed it! I did like some of the other reviewers said and kicked up the spices, mustard and lime juice a bit for some extra flavor but this is a very good base of a recipe!

Peanut Butter Vegetable Chicken Soup

Reviewed: Dec. 19, 2009
This was really good. I took the suggestion of sauteing my onion, celery and garlic in olive oil first. I also added 1 cup of white wine and cooked my chicken breasts in the soup for 3 - 4 hours and shredded it in the soup. I think cooking the chicken in the soup just gives everything more flavor. I also added a cup of cubed acorn squash, a little red pepper flakes for some heat and a teaspon of lime juice to brighten the flavor. This was a really good soup. We served it with couscous with golden raisins. We ended up mixing our couscous into our soup bowls and the sweetness of the raisins was really good! I will definitely make this again.

Sweet Grilled Peaches

Reviewed: Jul. 25, 2009
These were good. I sliced mine in half, removed the pit, sprayed each with a little olive oil. I mixed the honey and cinnamon together in a bowl with a little brown sugar. I dipped each peach 1/2 in the mixture and layed them "meat" side down on the gril. Beautiful grill marks and carmelization from the brown sugar. We served ours with ice creama and whipped cream. Very good!

Cavatelli and Broccoli

Reviewed: Jul. 25, 2009
This was very good. I only gave it 4 stars because I did have to make several adjustments. Many of the other reviewers made similar comments. I used a good bit of salt (1/8 to 1/4 C.)in the water when boiling the pasta. I also added several cloves of garlic to the water for flavor. After boiling the pasta I saved about 2 cups of the water and used that to cook the broccoli. I quickly shocked the broccoli in ice water to keep it bright green. Put my drained broccoli and pasta into the pot together and added the cheese, oil and red pepper flakes. I did not add any additional salt. It was delicious!
