Amazing Pecan Coffee Cake

Reviewed: Jun. 20, 2010
I really liked this coffee cake, my only problem with it was that i had to raise the baking time to 1 hour, i used a 9x13 inch pan and at 30 minutes, it was still very raw at the center.

Mayonnaise Biscuits

I thought these were way too salty. My family thought they were okay. Sorry, but will not make these again.

Mexican Corn on the Cob (Elote)

Reviewed: Jul. 21, 2010
This is very similar to the elote i make, except i boil the corn. then spread the mayo, sprinkle queso fresco evenly, and drizzle a small amount of butter on top. For those in my family that love chili, i add some pico de gallo to theirs. That said, this recipe is great, the grilled corn really brings out the flavor and i will be making elote both ways from now on.

Bacon 'N' Egg Tacos

Reviewed: May 23, 2011
This is really good, I've been making it for years. The only difference is that I use sharp cheddar instead of American, and sometimes i like adding mushrooms, onions, or tomatoes.

Thin Mint Cocoa

Reviewed: Aug. 6, 2011
This was pretty good. The only problem was that it was way too sweet even after reducing the sugar by half. I used 2% milk instead of the whole milk and pure peppermint extract (if you use the pure extract, remember to reduce the amount, i forgot to and 1 tsp was way too minty). I agree with Sarah Jo, it would taste much better if baking cocoa was used instead.

Peanut Butter Chews

Reviewed: Feb. 25, 2013
These were so easy to make. The only problem I had with this recipe was that I had to increase the cereal by 3/4 cup, but other than that, it was great. As other reviewers have mentioned, do not let the peanut butter mixture boil too long or you'll end up with bricks. I removed mine from heat as soon as small bubbles started appearing. To roll them, I first dropped the mixture by spoonfuls onto some parchment paper, then once they were cool enough to handle, I rolled them into balls. I also tried increasing the peanut butter to 1 cup and used 6 cups cereal, leaving everything else the same, but I couldn't roll it into balls and it just fell apart, but that's probably my fault for using too much cereal. I liked it both ways and I cant decide which one I like more.

Special Oranges

Reviewed: Mar. 22, 2013
I liked this recipe, the combination seemed odd to me but I ended up liking it. I didnt measure how much olive oil I used, I just drizzled some onto the oranges. Next time, I'm going to remove the entire peel from the oranges, having them on made them messier to eat.

Sugar Cookie Icing

Reviewed: Jul. 4, 2013
I love this icing, my search for the perfect icing stops here. I did have to thin it out a bit more. Instead of milk I used pomegranate syrup (the kind used for drinks) and it worked great.

I loved it, but thought it had a little too much lemon. Next time, I'm going to add lemon to taste.
