Creamy Rice Pudding

We had to play with the quantities and cook time a little to our liking, but it was delicious. I also tried it with almond milk which worked just as well.

Mom's Legendary Stuffed Hamburgers

Reviewed: Nov. 16, 2012
I used this recipe to make stuffed mac-n-cheese burgers and they were awesome! I followed this recipe almost exactly (I used less meat per burger, I used 1.65 lbs for 6 burgers which were probably a little on the small side, but I think you can easily get 6-8 burgers out of 2 lbs.) and I made Kraft's adult macaroni & cheese to put in the middle. I probably used less bacon because of he addition of the macaroni (I wanted left overs for an egg bake) but I just mixed the two together and they were delicious! Also I don't have a grill so I broiled the burgers which worked just fine. Thanks "Mom" for this amazing stuffed burger recipe! :)

Barbeque Pork Two Ways

Reviewed: Nov. 16, 2012
This was a huge hit with my family and guests! I cut some of the fat off the shoulder before cooking - just the really big portions. And I stuck it in the oven for about 20 minutes or so to crisp up the tops of the meat just before eating as I'd seen done in some recipes - so good!

Eggnog Pancakes

Reviewed: Dec. 27, 2011
Delicious pancakes! But I also had to add a 1/2c or more of milk to thin out the batter, it was much too thick. Will make them again probably next year, nice way to use up the extra eggnog :)

Cornish Game Hens with Garlic and Rosemary

Reviewed: Dec. 27, 2011
Delicious and well written instructions! Like others mention here definitely double the amount of sauce (at least). At step 4, making the sauce, I added 1-2 TBS flour to make a gravy and chopped up the garlic into it - delicious gravy!! My husband and I enjoyed these hens with some stuffing on the side for Christmas dinner and were extremely glad we did!

Sausage Broccoli Manicotti

Reviewed: Sep. 5, 2009
I also used chicken here instead, and Jumbo shells at the suggestion of others here. It was a little too much broccoli for my husbands taste, I reduced the red sauce a little, but didn't really need to since it's poured over top anyway.

Low-Fat Blueberry Bran Muffins

Reviewed: Aug. 1, 2009
I was looking for a recipe to use my leftover - getting a little too old for salad - blueberries, and this was perfect! I didn't have wheat bran, but I used FiberOne cereal instead and it worked great. I put a few too many blueberries in, and since they were fresh the muffins became a little hard to handle (also put them in paper wrappers which didn't help), but still delicious!
