Marci's Noyo Harbor Pan Roast

Yum. This was terrific. I thought I had an onion but it was starting to go bad so I didn't put any onion in it. I also used chicken broth instead of vegetable. It says 4 servings but my husband and I ate all of it so if I were making it for 4 adults, I'd double the recipe. I am giving this one 5 stars.

Stuffed Eggplant with Shrimp and Basil

Mmmm. Mmmm goood! This was very delicious. I read several reviews before making it and decided to make it as a casserole because I do not care for the skin of the eggplant. I didn't see where anyone else substituted dried basil for the fresh but I did use a teaspoon of it instead. I added fresh wild mushrooms and used a Reisling wine and the flavors were just wonderful. It was excellent.

Banana Wheat Bread

I made this recipe and it was dry, real dry. I did not have any honey so I used agave syrup but I can't imagine that would change it's texture. I will not make this one again unless I double the oil.

Spinach Brownies

This was very good. I saw where a reviewer used 1/3 c. of feta cheese and where another used 1/2 c. whole wheat flour so I followed suit. I really love the flavor the feta cheese gives it. I also chopped up 2 cloves of garlic and put it with the spinach while it steamed. I agree that this recipes surpasses the spinach bar recipe. I almost started making that one and then I remembered it was the spinach brownie recipe that I had not tried yet that I planned to make (i had picked out the recipe the night before). I would make this one again.

Protein Pumpkin Muffins

I was excited when I found this recipe because I felt it would be a healthy way for me to have something sweet. However, I have tried to make them a couple of times but they do not rise. They come out heavy and they aren't very good. I don't know if I am doing something wrong but I don't think I will try to make them again.

Salmon and Asparagus with Penne and Light Cream Sauce

I made this tonight and it was really good. I read the reviews to see if anyone had tried to reduce the fat and substituted anything for the heavy cream. The one cook made it with lowfat evap. milk but I didn't think that would taste as well. So I used a jar of Ragu Creamy roasted garlic and Parmesan sauce which only has 10 grams of fat per serving. I used about 1/3 of a jar and it was delicious. My hubby loved it, he is still raving over it and said I need to make it when we have company!

Crab Quiche II

Rather tasty, however, I used a deep dish pie crust and it was barely half full. Next time I will use the regular depth pie crust pan.

Salsa Chicken Rice Casserole

MMMMmm...so good. I almost did not make this because I did not have a can of cream of mushroom soup. However, I read Kirstin's review and saw that she had modified it and part of it was to omit the cream of muchroom soup. So I dmade it like she recommended and added about 1/3 cup of reduced fat sour cream to the soup/salsa mix. It was wonderful and my husband raved over it. I will make this recipe often!

Easy Crabmeat Enchiladas

Very good. I was trying to get by wih 8 oz of crabmeat and I had read another recipes that paired mushrooms with crab so I sauteed 4 oz. of mushrooms and added them to the filling. I was also short of sour cream and added a little fat free mayo. I used green enchilada sauce and they turned out great. I'm glad someone else mentioned they used the green sauce or I might not have attempted to even make them. I was pleasantly surprised by that they are so good without any cheese and that's great since my son i lactose intolerant.

Cocoa Banana Bars

I really didn't like these bars. The night before I had baked a batch of peanut butter & banana dog biscuits and the next day I made these so I would not be tempted to eat the homemade dog biscuits. Well, they don't tempt me at all. They turned out fine but I just do not care for the flavors and would rather eat one of my homemade dog biscuits instead of one of these bars.

Bran Flakes Muffins with Raisins

I really like this recipe. Except for using soy milk, I followed the recipe and although they were a little small, they taste great even tho there is only a scant 1/4 c. of sugar in them . I was looking for more recipes that use less sugar and this one is that meets that criteria.

Fantastic Black Bean Chili

I have to review this recipe because I made different versions of it. The first time I made it, I didn't have oregano and omitted it; I also used ground turkey instead of beef. We LOVED it. I made it last night and figured I'd follow the recipe this time. With the oregano, I did not like it half as much. It may be my personal taste because I don't care for an Italian restaurant that overloads every dish with oregano but I'm going to leave it out every time from now on.

Bubble 'n' Squeak

I liked this dish a lot. I wanted to find a recipe for cabbage. It is very tasty and the other members of my family liked it also. I used turkey bacon and turkey ham and it was really good.
