Pumpkin Whoopie Pies

First of all, these are AMAZING. I listened to the other reviewers and doubled the cookie recipe and made cream cheese icing. I'm not sure what I did, but the cream cheese filling was runny and gross. Then I made the filling on this recipe using hazlenut creamer instead of milk and adding a little pumpkin pie spice, WOW! Everyone raved about them. The cookie/cakes were so moist and delish, when making them I ran out of canned pumpkin, so I used a little canned pumpkin pie and they turned out excellent. Overall, a really really good fall recipe!!

Rick's Special Buttercream Frosting

This frosting was delicious and went over extremely well! I made a tiered cake and this recipe covered one 4-layer 6 inch cake and one 3-layer 9 inch cake, so it makes a lot! It did make it the night before and put it in the fridge and I panicked when I pulled it out to frost the cake and it was one big solid lump of frosting. I defrosted a little bit at the time in the microwave and it softened up and looked and tasted great on the cake! I made another half batch for piping and flowers and the consistency was perfect at first. It does get very soft with heat, I would use a little at a time unless you want mushy flowers. Overall, a definite make again, I’ll keep this in my recipe book!

Candy Cane Fudge

I found this recipe about 5 years ago when I made it for the first time. Its one of the only recipes on this site that I follow exactly, it's AMAZING!! I make it every year and my whole family and office love it. I always get asked for the recipe, and I love how the candy canes turn the white chocolate to festive colors depending on the candy canes you use.

Red Velvet Cake I

I made these last night (they are time consuming!). I made all the changes that were suggested and the cupcakes turned out amazing (22 minutes at 350) but the icing was a complete mess. It was watery and sugary. I spent over an hour trying to get a good consistency but they are still sitting on my counter without frosting. I'm going to buy some after work, I suggest that everyone else trying to make this recipe do the same.
