Baked Potato

This is the first time I've reviewed a recipe. I couldn't pass this up. I really got a kick out of the sarcastic reviews...this IS JUST a baked potato...right ;o) I'm commenting on this one because I'm a potato lover. Any which way you make em I love em. But for over 35 years now I have aways just put them in a 400 degree oven (without poking holes) for one hour. Never had one burst on me. I despise microwave baked potatoes...but I will try the partial time in the micro and remaining time in oven. If they still come out as fluffy as I'm used to...great...otherwise its worth waiting an hour for them to come out perfect!! Sometimes I wrap them in foil for a soft skin...when I don't wrap them and they come out with a crisp skin...I eat the potato...saving the skin for last. Then slather a little butter, salt and pepper on the skin...fold it in half or roll it up and eat the skin separate. YUM

Creamy Cheesy Scrambled Eggs with Basil

Fixed this for breakfast today. It's the only way I will eat scrambled eggs from now on. I used a dry Italian blend of herbs. About 1/8 of a teaspoon. Mexican 4 cheese blend and added a little onion powder. I used very little salt as I am afraid of over salting things. I don't think it needs salt at all. I'm a salt lover, but I'm trying to be a good girl and cut back on it as much as possible. This is a winner. Thank you for this awesome recipe.

Thanksgiving Leftover Casserole

I fixed this last night and reviewed it before I sat down and ate it. I gave it 5 stars for the smell. I now give it 10 stars (if I could) for the taste. My husband is still talking about it this morning!!

Slow Cooker Chicken Stroganoff

I FINALLY got to make this. IT. IS. WONDERFUL! Instead of the cream of chicken soup..I found a recipe for home made cream of chicken soup. I also added a little celery salt in the end. Next time I think I will add my own herbs instead of the Italian salad dressing mix. And I could see adding chopped artichokes to this. YUM Just made this again. This time I used a can of cream of chicken soup but I didn't have the Dry italian dressing mix. So I made my own from a recipe on here called "Italian Dressing Mix" by Debby. I cut up some left over cooked turkey and placed it in a pot with the dressing mix with a cup of low sodium chicken broth. I did not add the salt and used garlic powder instead of garlic salt...did use celery salt tho and it was perfect. I let that slowly warm and sit for a few hours on the stove so the ingredients would blend together...then I added the soup and cream cheese and it is sitting on warm until the hub gets home. I will serve it over rice. I've already had several tastes and it's so good. I think I will sub a bit of nutmeg for the sugar in the Italian dressing for this next time.

Sweet Bell Pepper Rice

This was such a disappointment... Sorry...didn't like anything about it. The herbs were overpowering..I can't fathom where all the good reviews came from?? Grrr...and it's making me rate a star... We should be allowed to pick no stars and even minus a few!!

Summer Squash Casserole

This is a 5 star plus recipe. A sister in law of mine made this several years ago for a holiday dinner. Everyone loved it. I changed it up a bit for this past Thanksgiving dinner. I sauteed the squash instead of boiling it. Instead of sauteed onions I used a can of French's onion rings. Cream of Chicken soup instead of mushroom. Used 1/2 the amount of butter.. I also took the advice from another review and used a box of Chicken flavored stove top stuffing pouring half on the bottom and half on top drizzled with 2 tbsp of melted butter. FABULOUS!!

Hawaiian Pineapple Sweet & Sour Smoked Sausage

I wish I took a picture of this. I made it before I knew it was on this site. I got the recipe from the Hillshire Farm site. I made it about a month ago and just recently got the stuff to make it again. It's such a simple recipe and very yummy meal. I served it over basmati rice. I used a mixture of colored bell peppers which made it very eye appealing as well. It will be a staple in my house. You could sub Ham or Chicken for the meat.

Jam Muffins

Just made these and finished eating one of them. YUM!! I took some peoples advice. I used applesauce in place of the oil. Added 1/4 cup extra sugar and a tablespoon of vanilla extract. Put the jam in the middle of the muffin. They were plenty sweet without being too sweet. I was afraid of using too much jam and they definitely could have used more. I put walnuts on top of every other one. I liked those the best. I will be making these again and again!!
