Jalapeno Popper Spread

Reviewed: Feb. 5, 2014
My men LOVE this! Surprisingly for me, I followed the recipe without any "tweaks." On the day after (if there is any left) my men use it as a spread on sandwiches. Says it gives them a real kick!

Slow Cooker Chicken Stroganoff

Reviewed: Jan. 28, 2014
Nice addition to my main meal recipes. Didn't have time to put in the crockpot but still worked fine on stovetop. I did add another can of cream of chicken soup, a little milk and sprinkles of Italian seasoning and garlic. I needed a little more than the original recipe made and wanted it a little thinner. Thanks!

Creamy Potato Pork Chop Bake

Reviewed: Jan. 26, 2014
Added green bean bottom layer as suggested by some other reviewers and used Cream of Mushroom soup vs Cream of Celery (not my fav) and boneless pork chops vs bone-in pork chops. Made a good winter all-in-one meal of boneless pork chops, hashbrown casserole and green beans. Gotta love the crunchy onion topping, too! Made my Recipe Box for Main Meals. Thanks! :-)

Christmas Breakfast Sausage Casserole

Reviewed: Oct. 25, 2012
Wonderful base recipe for egg casserole. I can't ever follow exact directions as I love to throw things and try different combinations. Do love using the cheese and garlic croutons. Use some half and half with the milk. Extra eggs. Throw in some jalapenos. It is a hit every time no matter what type of sausage or any other "extra" ingredients. Thanks!

Easy Seafood Salad

Reviewed: Jun. 22, 2012
First, I left out the shrimp so it was only a crab salad. I jmade this for a shower tomorrow and did a "taste test" with my neighbors. I just told them I had two different recipes and needed to know which one was best (if any). I had mine and Kroger's in similar tupperware. Three out of four chose mine over the Kroger's. The fourth liked them both but preferred the slight taste of dill in the Kroger's brand. They were all thrilled when I told them the one they liked was homemade and EASY to make! I used a bag of coleslaw instead of dicing it myself, making it even easier. Thanks!

Best-Ever Texas Caviar

Reviewed: Apr. 22, 2011
I've been using this recipe as a base for my Texas Caviar for awhile now. Fixed it for my card club for the first time and had several "volunteer" to take some home with them (and request that I give them the recipe). You really can mix up the ingredients any way you want. It is the dressing that makes all the difference. The only change I make to it is that I use seasoned rice vinegar. Just way better than the Italian dressing! UPDATE: This is still my favorite and crowd favorite. I never use the Pinto beans. We just don't like them. What separates this recipe from all the rest is the rice vinegar mixture (I use seasoned rice vinegar) - DO NOT USE ITALIAN DRESSING. That makes this recipe like all the rest, which are good - just not as good as this.

Iced Pumpkin Cookies

Reviewed: Oct. 18, 2009
This type of cookie (more cake-like) is not usually my 5-star favorite; however, this recipe is so versatile that I did give it 5-stars. I did substitute 1/2 cup brown sugar for white and did the same for flour substituting 1 cup of wheat flour in. I made 3 different icings: the recipes (powdered sugar icing), cream cheese icing, and Pumpkin Cookie V brown sugar/powdered sugar icing which I liked best. My DH liked the cream cheese the best. I split the brown sugar icing in half and mixed toasted pecans in. On the cream cheese and regular icing, I alternated sprinkling iced cookies with cinnamon or toasted pecan pieces. It looked like I had a whole tray of different kinds of cookies out of the same batch. Guaranteed to please everyone! I did add pecans to my batter to the last half of my batter as well and then finally made some with mini chocolate chips (which surprisingly, I didn't really care for even though). Thanks for the good fall pumpkin recipe. Now I have 3 pumpkin favorites: pumpkin pie, pumpkin dessert, and these cookies.

Great Pumpkin Dessert

Reviewed: Oct. 11, 2009
Great and easy pumpkin dessert. It makes a nice change of pace from pumpkin pie. I've made it several times - usually without nuts due to my picky eaters. This time I did add nuts halfway through baking as per other reviewers. The pecans still got a little too brown. Next time I will mix the nuts with the cake mix instead of sprinkling on top.

Blackberry Cobbler

Reviewed: Aug. 5, 2009
I have made at least 10 cobblers with this recipe - all different sizes and even one where I forgot to add baking powder/salt with the all purpose flour. Every one has been great! I even made a peach one, slicing my fresh peaches thin then coating with cinnamon, nutmeg, and a little sugar. Also substituted some brown sugar for the white in the syrup mixture and poured some caramel ice cream topping on top instead of sugar for the last 15 minutes of baking. It was wonderful as well! The crust is what makes it so good and we wouldn't do it any other way besides rolling it up (even though it isn't easy with our HUGE berries!). We like crust in every bite. Oh yeah, in an attempt to make it "healthier" I use 1/2 white, 1/2 whole wheat flour. Of course then my DH pours half and half over his dish - so much for healthy! :-)

Slow Cooker Chicken Taco Soup

Reviewed: Oct. 19, 2008
I didn't want to wait so didn't do the slow cooker method. I boiled my chicken in water with garlic, pepper, and hot salt. While cooking, I put other ingrediants in pot except chili beans and beer (used chicken broth instead). I also added a can of green chile enchilada sauce. My hubbie gave it a 4 saying it had too much chicken (he'd rather eat beef) and not "soupy" enough. I gave it a 5 because it was the perfect amount of heat - left some fire in your mouth but not your stomach plus it was ready to eat in under 30 minutes.
