My Holiday Face
About this Cook
I'm a mother of 2 boys, 17 and 9. I enjoy cooking for large groups of people. Fortunately my sons bring a lot of friends over often. I've been married going on 22 years. I don't like to share my kitchen much, so that makes me the sole cook in our household. I don't think the husband minds too much though. =0) I do share it with my boys though. I believe they need to know how to take care of themselves when they go out on there own.
My favorite things to cook
Any thing Mexican, Italian, and Southern Cooking.
My favorite family cooking traditions
Christmas morning, after all the commotion, we make Eggs Benedict together. For New Years morning, we make a breakfast casserole the day before when I'm preparing everything for that evening. That way I'm not cooking first thing in the morning.
My cooking triumphs
I was married just a few years and finally had the IL's over for dinner. I prepared Prime Rib Steaks, stuffed mushrooms, salad and a backed potato. The FIL said "Well, I guess she's a keeper." That was the best compliment ever coming from him because my MIL is an exceptional cook! I smiled for days afterward!
My cooking tragedies
Boiling eggs! One Easter I was getting everything ready to color the eggs and had to leave the kitchen and became distracted. Disaster! I didn't get back to the kitchen for over an hour! The Dh started hearing things pop! He asked me what I was cooking and I ran to the kitchen to find burnt eggs that had exploded! Needless to say I had to make another trip to the store for eggs. :)

Quick and Easy Alfredo Sauce
This is AMAZING! I added basil and fresh roasted garlic instead of powdered though. Thanks so much!

Seafood Lasagna II
This is by far THE best seafood dish you can prepare! I have made a few alterations though to lower the expense: for those who think it has too much cheese I only use 8 oz of the Italian blend and add 8 oz mozzarella. For those who said the sauce was bland, I use only 1 jar of Ragu's Roasted Garlic Parmesan Alfredo Sauce. Instead of scallops, I use flounder and last but not least I add 3/4 cup dry white wine, 1/4 cup fresh parsley and 1/4 tsp ground nutmeg for that Ummm?. As is, the recipe is still a 10!

Country Cooking Slow Cooker Neck Bones
I really liked the flavor but there wasn't enough meat on the bones to make it worth the trouble. You need to be a picker of the bones to enjoy this one. I cooked mine for 6 hours and the meat still didn't fall off the bones. So I continued to cook them for 4 more hours (started it at 6:00am) and the meat was still clinging to the bones. As for what to serve it with: I made a brown gray and wide egg noodles with corn on the side. Like I said the flavor was awesome! Just too time consuming.
