Melt-in-Your-Mouth Slow Cooker Chicken

I'm not sure what intrigued me to try this recipe. The amount of fatty creaminess from this dish made me gag when I tried a bit without the pasta. It surprisingly worked well when noodles were added to it, along with peas. I still don't think I will make this again, just looking at it makes me queasy. My boyfriend does like this dish though, and says it smells good. I may just use the seasoning for the chicken alone without the sauce.

Pumpkin Turkey Chili

This is really good. I did have to add some spices (pumpkin pie spice) at the end (I cook by smell, so add as much as it takes for this to become fragrant). Without that addition, it was kind of bland. I did have people the next day in school asking me what I was eating, and for the recipe.

Fried Okra

Bolas de Mani (Peanut and Plantain Balls)

I loved these! Very healthy and hearty way to start the morning. I made these exactly as directed, and sprinkled them with paprika (yes, weird I know) and ate them with scrambled eggs & chorizo in the morning). I used all natural peanut butter, it doesn't have added sugar to it so I wouldn't have to use these as a dessert because they weren't sweet.

Yellow Squash Casserole

I had some yellow squash on hand, and not a whole lot else. I ended up adding club house crackers and a few whole wheat crackers, and used minced garlic and dried onion, baby carrots, nutmeg, Frank's Red Hot sauce, and Bacos bits. This was a spur of the moment "I feel like cooking" recipe and it turned out well. It was a bit mushy, but I'm one of those people who dislikes really crunchy food, so it was perfect for me. I like how quick and versatile this recipe is, being a college student I don't have time to cook forever or go grocery shopping often, so I like that I could use whatever I have laying around to make a good meal.

Truck-Stop Buttermilk Pancakes

This is one of the best pancake recipes ever! I did not have buttermilk, so I used 2 Tbsp. of white vinegar with 2c. of milk (I scaled this to 5 servings) and let it sit for about 5 mins before adding. I also added 1 Tbsp of cinnamon, 1/2 c. of raisins, and 2 tsp of vanilla. It turned out a little lumpy, but after whisking it, this turned out well. I freeze these and then use throughout the week for breakfast! Yum!

Yummy Strawberry Shake

I think the serving size is a little off... but I used peach ice cream instead, and added 1/2 tsp cocoa powder, and 1/8 tsp vanilla, and used agave syrup instead of white sugar. Turned out great!

Baked Tofu Bites

This was definately not worth the amount of stuff I had to use to make it. I love tofu, but this was waaaay to salty to even eat. The flavor was just plain odd to the point I can't even describe it, I had to pick them all out of my salad. My classmates who tried them just made a strange face and said they were 'different', hopefully this didn't scare them away from tofu for good. Bad texture too, maybe my oven cooks faster than the time set here. Maybe I'll ease up on the soy sauce and leave out the sesame seeds, otherwise I can't say I'll ever make this again.

These had a very cakey texture to them. But the overall flavor wasn't terrible. Maybe next time I will add some cinnamon and leave out an egg and the baking powder.

Peanut Butter and Banana French Toast

Overall, this was just mediocre. After awhile it was just plain annoying to eat. I used whole wheat flaxseed bread since I don't eat any white refined grains, and this bread works well with all the other FT recipes I've used, but not so much for this one. I added some cinnamon to this, used red bananas and used all-natural smooth peanut butter. There didn't seem to be enough egg to coat everything, maybe my bread was too big for this. If I am feeling daring again, I'll try this with some more spices and less peanut butter. I think this was just too big to eat as well, maybe I'll mash the bananas next time. Something with this recipe just didn't "feel right", I'll see if I can figure out what it is, good idea though.

Curried Carrot Soup

I don't know how to say this, so I'll just come on right out and say it, this reminded me of eating dirt, I can never seem to find a carrot soup that doesn't taste like I'm eating earth. I don't know why because I love carrots, but they never seem to translate well into soup. I'll keep searching for that perfect recipe, but my mom liked this so I'll be nice and give it 2 stars.

Spiced Sweet Roasted Red Pepper Hummus

This wasn't the best hummus I've had, I didn't have cumin or olive oil to add, so I used curry spices on a smaller scale to subsitute for cumin. There was still that red pepper "twang" aftertaste that you get when biting into a fresh pepper. Maybe because I made my own roasted red peppers, I might try canned next time and buy some cumin and EVOO. It was also a little chunky, maybe EVOO would've fixed that. I'm not discouraged yet, but if I do make this again, I'll make those changes for sure. Tasted good on a turkey pita sandwich.

Tahini Butter Cookies

I scaled this recipe down to 20 servings and made the following changes: added 2 heaping Tbsp. of honey, 2 Tbsp. of brown sugar, and 1.5 tsp. of cinnamon, and used margarine instead of butter. They turned out phenomenal! I greased a cookie sheet with Pam (with olive oil flavor) and the cookies came right off the sheet when they were still warm. They were a little greasy because of this maybe, but they didn't even last long enough to cool completely because my friends and family gobbled them up as soon as I put them on a plate! Great flavor and texture! Everyone of my friends loved them! THANKS!!!!

Asian Pear and Strawberry Smoothie

This was very good! I used no sugar added soymilk and vanilla soy yogurt, a splash vanilla and cinnamon and for the sugar I added 1/8 tsp of agave for a slight hint of sweetness. I can see where stevia would be a good addition, but since I am horribly allergic to it, raw agave syrup did the trick, thanks!

Peanut Butter and Banana Smoothie

Instead of adding sugar to bananas which are already very sweet to me, I used a spalsh of vanilla extract and a pinch of cinnamon to play up the sweetness. Instead of the yellow bananas, I used 3 small red ones, and also added a few cubes of ice to make this drink cool and refreshing. Just make sure to do most of the blending before the ice is added or the peanut butter will freeze into chunks. I used all-natural (just peanuts) peanut butter in this, turned out great! Thanks!

Banana Pancakes I

I took some of the suggestions named here and used 2 T. of applesauce for the oil, 1 tsp of vanilla, and then I decided to add 1/2 tsp of cinnamon and 1/4 tsp. of apple pie spices. I also used those small brown bananas instead of the yellow ones, they are more dense and less sweet than the yellow variety (use 3 small for 1 yellow big). They turned out fantastic! What a treat! I topped them off with homemade all-day apple butter and they were a nice sweet way to start my morning! Thanks for the recipe!

Best Cream Of Broccoli Soup

I love this soup!!! I added a little bit of garlic to it and blended it with my Magic Bullet, leaving some whole pieces for a thicker texture, added some Parmesean cheese to top it off, and it turned out amazing!

Chocolate Peanut Butter Bars II

I didn't have the chocolate chips, so I used cocoa powder instead, I'm sure if I had used chips it would've tasted better, so I'll rate the filling because I had all the ingredients. It was VERY sweet, but it still had a good flavor, since my topping was nearly sugarless, it made a good match to have these two together. I had a hard time mixing it completely, so I just used my hands to mix it, and then froze the whole thing, and it turned out great! Very good when I have spur of the moment sweet cravings! Thanks!

Strawberry Cake from Scratch

This cake is pretty good! I didn't have any cake flour so I used all-purpose and cut the amount by a 1/4 c. Then I used 1c. of unsweetened frozen strawberries and it still turned out VERY sweet (for my friends/family, but sweet enough for me), I also used arrowroot flour for the eggs and agave syrup for the sugar, agar-agar flakes and strawberry flavoring subsituted for the jello and vegan margarine for the butter. I was delighted to find out how flexible the recipe was, I had some people tell me the cake was too dense, but I thought it was just perfect! Thanks!

Vegan Chocolate Cake

YUMMY! These were so amazingly good! I made caramel frosting that didn't turn out too well, but the cake definately saved it! It held onto the paper cupcake liners a little too well, but it was so good! It reminded me of a sponge when I looked at it, but the taste and consistency don't lie! This is a keeper!
