Bolas de Mani (Peanut and Plantain Balls)
I loved these! Very healthy and hearty way to start the morning. I made these exactly as directed, and sprinkled them with paprika (yes, weird I know) and ate them with scrambled eggs & chorizo in the morning). I used all natural peanut butter, it doesn't have added sugar to it so I wouldn't have to use these as a dessert because they weren't sweet.

Yellow Squash Casserole
I had some yellow squash on hand, and not a whole lot else. I ended up adding club house crackers and a few whole wheat crackers, and used minced garlic and dried onion, baby carrots, nutmeg, Frank's Red Hot sauce, and Bacos bits. This was a spur of the moment "I feel like cooking" recipe and it turned out well. It was a bit mushy, but I'm one of those people who dislikes really crunchy food, so it was perfect for me. I like how quick and versatile this recipe is, being a college student I don't have time to cook forever or go grocery shopping often, so I like that I could use whatever I have laying around to make a good meal.

Truck-Stop Buttermilk Pancakes
This is one of the best pancake recipes ever! I did not have buttermilk, so I used 2 Tbsp. of white vinegar with 2c. of milk (I scaled this to 5 servings) and let it sit for about 5 mins before adding. I also added 1 Tbsp of cinnamon, 1/2 c. of raisins, and 2 tsp of vanilla. It turned out a little lumpy, but after whisking it, this turned out well. I freeze these and then use throughout the week for breakfast! Yum!
