Coconut Cream Cake I
absolutely wonderful, for a little extra kick I added a tiny drop of coconut extract to the icing. The icing was a bit bland the first time, but the second time I made the cake I put a little extra in the icing and it was wonderful. Keep it refridgerated for the the best results and to keep it from turing into soup

No Bake Rum Balls
this was an absolute hit with my family. Most of my loved ones have never had rum balls before and I was a little hesitant about trying to make them myself, but these turned out excellent. Depending on how finely crushed the wafers are you'll need to add a little extra liquid (rum, syrup, or both). It works out better if the wafers are crushed at least it did for me, but its all by preference. I just finished the 6th batch for christmas so I'm going to go rest before I have to start on the cookies.

Chicken Noodle Soup
Excellent, this has become a new staple in our cooking choices. I did use actual chicken broth rather than the bullion cubes so that made a difference, it was a fuller flavor. I also did a little multi-tasking and chopped my veggies and sauteed them while I chopped and cooked the chicken breast. Cooking the chicken took a little longer so to keep the veggies from getting over done I let them begin boiling in the chicken broth and then added the meat when it was ready.
