Anchovy Linguine

I actually was about to post this same recipe as it was passed down from my Italian grandmother. Fabulous recipe. I have gotten friends to fall in love with it when they didn't even LIKE anchovies! it is on the salty side (which I feel is offset a little by the garlic). If re-heating, drizzle a little water over the pasta because this is a dry sauce.

Spinach-Stuffed Flounder with Mushrooms and Feta

absolutely delicious. I do not normally bake fish as I tend to go toward frying or grilling it. This recipe was delicious and easy! (Quick too!)

Hot Spinach and Artichoke Salad

Great combination of ingredients. However, be careful if you are not a big fan of vinegar. I've never cooked a recipe with artchokes before and I didn't realize until after making that vinegar was the main ingredient in the 'marinade' for the artichokes. I'll have to see if there's an alternative type for next time. One full onion was a little much for my preference so I'll probably cut back on that to a half, depending on the size.

Spinach Dip I

Delicious...especially using Knorr's Vegetable mix. On the back of the package it says to squeeze dry the chopped frozen spinach. If you don't have time to fully thaw, just toss the spinach in water to finish breaking it up. I found that if you put the spinach in a dishtowel and ring out the towel, this makes the task of squeezing the spinach extremely easy. Hope this helps.

Quick and Easy Pizza Crust

Another alternative to adding spices to the dough...Once the pie crust is rolled out, before I fill up with sauce and cheese, I brush a thin layer of extra virgin olive oil over the crust. I normally keep a container of oil with some crushed red peppers, oregano, and rosemary in it for just this purpose. It made such a big difference! It also makes a great compromise if not everyone likes spice.

Seven Layer Taco Dip
