I like to cook mostly when I camp. I love to use cast iron. last hobby was usin Dutch Ovens and charcoal to bake. We won an award at the Boy scot's competition....lol..didn't even know we were entered. Also, tried one of those cardboard box ovens, and I swear it worked as well as a normal oven. Just need to put an oven thermo in it.
My favorite things to cook
Brisket. I am trying to make the perfect Brisket. I have judged MANY Brisket cook-offs, and I can do better...eventually. I know I am stuborn on the brisket, but it is a goal of mine to win a local contest...a BIG one. I do like to cook almost anything you can think of. I bake, fry, dry, boil, heck, i can do it all. I would REALLY like to take cooking classes and get certification, and get a nice job as a chef in a nice resturaunt after I retire from this job. I checked last year, and the local community college and the GI Bill said I could, but I didn't get the paperwork in in time. We are also missing the nice resturaunts.
My favorite family cooking traditions
Not a lot of tradition, really. I guess i cook for comfort. When I was growing up, the only times, normally, when my family got together was on Thanksgiving and Christmas. All my favorite aunts and uncles and cousins. I loved it! We would play till dinner, eat till we could not stand it, then go play some more. It was the best times of my life, and I guess I associate it with the foods.
My cooking triumphs
Cooked a brisket...about a year ago, last time we went camping. I smoked it on a water smoker for about 8 hours. Anyway, when it was almost done, all the other campers, camp ranger, everyone was at the camp. I finally took it off the fire and cut the tip so people could sample it. They loved it!
My cooking tragedies
Back yard. Cooking a brisket with wood and flavored pellets. I was having trouble keeping the pit at the right temp. had been at it for about 4 hours. Anyway, loaded the firebox with wood, and was gonna vent off the extra heat after it started good. But I sat down with my mp3 player and a cozy jacket, and went to sleep. You would be surprised how small a 10 pound brisket can get.
