Garlic Alfredo Tilapia

Reviewed: Oct. 27, 2010
Wow!!! I was expecting this to be good but it was amazing! My husband said it's his favorite meal ever :) and he's not even a fish person. I added a tad more garlic and sauted shrimp with that, then just eyeballed the Alfredo sauce and it is officially my favorite meal. It would be really good on top of pasta. To top it all off it only took 15 minutes, you can't beat that!

Stuffed and Wrapped Chicken Breast

Reviewed: Mar. 28, 2010
This was always my favorite growing up!! You don't have to pre-cook the bacon first, just wrap them up, stick them under the broiler for about a minute on each side first, that way you get all the yummy bacon flavor (ok and fat lol) in the chicken and you don't dirty up a extra dish. Thats the way my family always did it. I've never tried it with the bell pepper, i'll have to try that! But it's good without it too!

Chicken Spaghetti II

Reviewed: Aug. 13, 2009
My best friend brought this to our weekly get together, we really enjoyed it! I asked for the recipe before she left lol. BUT, it is essentially the nacho dip my mom made me as a kid, but with chicken and pasta instead of chips. If you can get past the fact its queso dip on spaghetti it's really good =)

Baked French Fries I

Reviewed: Aug. 10, 2009
We really like these!! I don't know if it's just me, but the cooking time isn't right for my oven (but usually my oven cooks just fine). I have yet to have the PERFECT batch because so far they are either a little burned or little soggy (if i leave them in the whole time they are black!). The seasoning is really good (don't be shy with it!) I'll keep experimenting with oven temps and times until i get it right for my oven. But they are really tasty! Thanks

Key West Chicken

Reviewed: Aug. 10, 2009
This was really good!!! I let it marinate overnight and we had it for dinner the next day. It was so easy to just whip it up the night before and throw it on the grill the next day!! It looks like it would have a lot more flavor than it does (especially in my case, after marinating overnight), BUT it's still really GOOD! I will use this marinade for anything that calls for grilled chicken from now on. We can't wait to try out grilled chicken clubs with it, or maybe even fajitas! Thanks!!!

Chocolate Chip Banana Muffins

Reviewed: May 18, 2009
Soooo good!!! My muffin tin was dirty so I made it in a 8x8 and cooked it a little longer, it turned out fine! I did have to use sour cream b/c thats all i had, and i added a little brown sugar a 3 bananas (1 too many) and powdered sugar to the top. Just a heads up, the batter looks dry until you add the banana's. Thanks for a great recipe!

Country Green Beans

Reviewed: Mar. 14, 2009
I've been making my green beans like this since I've started cooking, and i love them. I usually just dress up canned green beans this way but i know fresh is best! most of the time i use bacon in place of the ham. My mom always made hers with a ham hock and they were soooooo good! These flavors and beans were meant to be together!

Chicken Noodle Casserole I

Reviewed: Feb. 19, 2009
I ate so much of this i feel sick now! I pretty much followed the recipe as is except for a few minor things. I added a onion, carrots, celery, bay leaves, and some peppercorns to the water i boiled the chicken in. I also added broccoli and Paula Deen's house seasoning to the casserole. I didn't have any ritz so i used seasoned bread crumbs. This was really good! It didn't taste like i expected it to though. after tasting it I think instead of the broccoli, peas would be a better choice. I will definitely make this again, but most likely when i already have leftover chicken. I buy my chicken breasts frozen so it was a little time consuming.

Mrs. Sigg's Snickerdoodles

Reviewed: Feb. 19, 2009
Ok i believe you now about taking them out at 8 min. Well actually mine hadn't started to "crackle" yet at 8 min so i left them in for the full 10. they looked pretty much raw in the cracks when i pulled them out but now that i'm eating them they are a little too done, so AS SOON as the start to crack take them out and leave them on the baking tray for a few minutes. Now, i had to do some substituting b/c i didn't have all the ingredients so heres what i did: was out of eggs so i used mayo instead also i don't buy cream of tarter so i did the baking powder and lemon juice substitute and they came out fine. Next time i won't cook so long.

Okra, Chicken and Rice Casserole

Reviewed: Dec. 30, 2008
This was reeeally good! i only had white rice but it worked out just fine. I'm pretty sure i added my own seasonings to my liking and i know i added some of paula deens house seasoning to the chicken. I've always been a big fan of okra since i was little but i can see how if you have never had it before you would think it's weird and slimy lol. I like it though! 5 stars lots of flavor

Bacon for the Family or a Crowd

Reviewed: Dec. 8, 2008
Worked well, i accidentally left them in a little too long but they are still yummy, but that was my fault! I hate having to clean up bacon grease off the skillet. with this all i did was crumble up the tin foil and i was done. To the person who said it wont get crisp this way, you obviously didn't try it b/c it does. Thanks for the great tip!

Omelet in a Bag

Reviewed: Dec. 8, 2008
I just made these a few minutes ago and omg they were so easy and tasty!! I didn't have all the "optional" ingredients so i made mine with green onions, cheese and bacon (salt&pepp too). I have always been a failure at making eggs lol but this method is fool proof. I used cheapo dollar store brand baggies and i had no problems with it busting. Also, my eggs usually get cold by the time the biscuits are done but you can just turn the heat off and leave them in the warm water and they stay warm as long as u need. definitely a keeper!

Zesty Porcupine Meatballs

Reviewed: Dec. 1, 2008
this is a new staple recipe in our household! My meatballs have never stayed together. the first time i browned one side but they tried to fall apart so i just poured the sauce in and let them cook until they were done and it was good. the second time i attempted to brown them again and gave up. I put them in the oven as others suggested and crumbled up the ones that had fallen apart and added it to the sauce. I think i might crumble one up every time and add it to the sauce because it made it sooooo much better. I also have always precooked regular rice. I let my little sister help me make it and she loved getting her hands dirty and squishing it all together and gobbled it up. I serve it over rice yummmmy. OH and definitely make extra sauce!!

I'm in heaven! i had my doubts about this when it was ready to go in the oven b/c it just didn't look right, but when it came out of the oven it looked great! I was better as it cooled also I didn't eat it with ice cream but i know it would be sooo good!

Juicy Pork Chops

Reviewed: Nov. 4, 2008
These were the juiciest pork chops ever. 5 stars. I can see how some people could say it's too salty but we like salty food. I added a little teriyaki sauce and used fresh garlic. I let them marinate for longer than the 12 hours, lots of flavor but not too salty for me!

Campbell's Kitchen Creamy Chicken Enchiladas

Reviewed: Oct. 13, 2008
These are great! Instead of Pace picante sauce i used enchilada sauce and rotel. When i rolled them up i added a little of the soup mixture, a little rotel and some cheese. I poured the rest of the enchilada sauce on top and they were so good. I will definitely make these again!!!
