Mom's Zucchini Bread

I followed recipe with the exception of 1/2 white flour, 1/2 whole wheat flour. You must like sugar. This bread is soooooooo sweet. Next time I will cut the sugar in half. I can't taste anything else except sugar.

Tiramisu Layer Cake

I made this for Christmas and it was OUTSTANDING!!!! I made the cakes the night before. I followed some of the reviews and made 2 coffee layers and added 4 times the coffee powder. I used Pillsbury White Cake mix because my store did not have the Duncan Hines. The next morning I made the frosting and filling. I also doubled the Kahlua in the frosting and filling. I turned the cakes upside down when layering them. Love this recipe. It was so easy to make. I will be making this over and over again!

Frozen Blueberry Muffins

My son wanted blueberry muffins and I only had frozen ones. This recipe was good, but I don't think they would have much flavor if I didn't sprinkle the tops with Cinnamon and Sugar (didn't use nutmeg). I also added some wheat bran (about 1/4 cup) with the flour mixture to add something healthy! Put in about 1 1/2 cups of blueberries. Will make again with whole wheat flour.

SO YUMMY!!!! You need to definately at least double the recipe. One batch is not enough! I didn't try it with the soda. I like it non-carbonated. Can't wait to make it again!

Apple Strudel Muffins

There is nothing healthy about these muffins! I tried them even though I knew they were not healthy from the recipe because of all the great reveiws. They are so sweet, all I could taste was sugar. I did use some review hints, such as using 1/2 cup brown sugar and 1/2 cup white sugar, adding 1/2 tsp of cinnamin and 1/8 tsp of nutmeg. I meant to add oats to the topping as one review suggested and forgot. THey wre very time consuming to make. The topping was nice a crunchy the first day, but after storing them overnight, they became soggy and wet on top. I will look for a healthier alternative since I am eating for 2 and have two small boys that eat them!

Broccoli Shrimp Pasta Toss

Excellent, but can see how it would be too dry if I did not add liquid. I added about 3/4 cup of chicken broth (did not have white wine as suggested) and a couple tbls of lemon juice. Also cut grape tomatoes in half and added. I steamed the frozen broccoli first then added it to the onion/garlic mix. Added the shrimp and let it cook a few mins then added the liquids and toms. Delicious. Next time I will make even more sauce to really wet the spaghetti. My 2 boys (3 1/2 and 2 years old) loved it.

Oven Roasted Potatoes

These were great and easy to make. I had all the ingredients, which is suprising. Next time I will leave out the red pepper flakes because they were too spicy for my kids. I chopped up some fresh carrots and added them too...delicious! They took longer than it said in the recipe (about and hour) and still didn't get crispy the way I like them, so I put them under the broiler for a few minutes.

Garlic-Shrimp Angel Hair

This was not good. I did modify it slightly. Used 1 1/2 cups half and half and 1/2 milk. I don't like pesto, so I used some basil as suggested in another review. I had about 1 cup of fresh broccoli, so I also threw in some frozen peas. I was VERY bland. Could have used a bit more parmesan, but I will not make it again.

Perfect Turkey

Excellent!!!!! Made for Turkey Day and it was moist and wonderful. Very easy to make. I put the brine pot with the turkey soaking in the garage overnight. The temperature here was low enough for it. Turned out delicious, not salty at all as I was anticipating. This is my new Thanksgiving turkey recipe. Thank you!!!!!

Baked Ziti III

I also followed other advise and mixed the hot noodles with the sour cream. It was good, but way too much sauce. I think that the taste of the sauce took over the whole meal. I will try again with 1/2 the amount of sauce.

Ty's Barbequed Chicken

I modified this recipe slightly. First, I double the ingredients. I did not have any onions, so I added onion powder and onion salt. Also added 2 cloves of minced garlic. I used my crock pot and sliced the boneless breasts into thick pieces. It had plenty of sauce to serve with the rice and green beans I made. I just thought it was too sweet. I will try it again and cut back on the brown sugar.
