White-Hot Hot Chocolate

I do not like hot chocolate, so I thought I would like it better if I made it myself and it was a different flavor. I ended up using what I had on hand. I used skim milk, added almost an ounce more of white chocolate, and I didn't have any cayenne pepper. But instead I added some peppermint extract, which gave it a really good flavor. I was very pleased with it. And as someone who doesn't like hot chocolate, I'd make it again. And I think I'd switch out the white chocolate with all sorts of various chocolates. I think it was a pretty good starting point.

Fruit Crisp Topping Mix

JUST served this at an office function, and it went over so well! I made 1 with blackberries, raspberries and blueberries, and the other I added strawberries. The one without strawberries I used a Vegan Butter Substitute, because the person it was for is allergic to animal products. It was basically a shortening, and I couldn't taste any difference between that and the real butter. After baking them last night, the crisps were in the fridge overnight and reheated in a toaster oven in the office to be heated up. We served them with fresh Whipped Cream, and some had them with Vanilla ice cream. They were a HUGE HIT! And I've got plenty of topping left over to make more for a party this weekend, and for anytime I want something sweet! FYI on the combining dry ingredients: The bowl was large, and it's a lot of stuff, for first time-ers who might not be sure, just get in there and mix it with your hands.

Marshmallow Fondant

This was SUPER easy to make and it tasted GREAT! I followed others advice and used Crisco instead of butter. It was VERY sticky work, and took longer than I thought to knead the dough, but it got there. I left it in the fridge overnight, and started working with it the next morning. It was pretty stiff, but ripped it apart and got it pliable in smaller sections, as I'm just not used to kneading. But once it was workable, it became very easy to use. My biggest problem was I ran out of counter space! This being my first time using fondant (I don't consider my disaster about 5 years ago with the store-bought stuff!), I wasn't sure about the amount to use on my cake, etc. But my Hello Kitty cake (made from 2 8in round cake pans stacked) turned out great! The color of the Marshmallow Fondant here didn't need to be changed at all, and again, the taste was fabulous! And I had a TON left over! I am one of those people who HATE the taste of Fondant, and if you are one of them as well, don't let this dissuade you. This is infinitely better. For years my personal cake decorating has been limited to my buttercream creations, but I've always wanted to try a hand at Fondant decorating. But why try something if you don't want to taste it? Now I have no worries!

Salmon Cheese Spread

Huge hit at the holiday parties! Everyone kept calling it the "spicy dip" when they wanted to reference it for me to make again. Possible substitution: 1 time I forgot to pick up the green onions from the store before making, and I substituted regular white onions chopped. Didn't make much of a difference. But absolutely fabulous. I have even made it for myself to just have on hand. Make sure that cream cheese is softened though!

Salmon Ball

The BIGGEST hit at a Thanksgiving pot-luck at work, then Thanksgiving dinner, then Post-Thanksgiving dinner, then another party later on (you get the idea!). I noticed a lot of people mentioned smoked salmon. For someone who doesn't have the money for a handled smoker, and canned smoked salmon isn't available in the regular grocery stores and is way too expensive in the fancier, Bumblebee's Atlantic Salmon is a pretty flavorful alternative. The leftover (if there is any) hold up very well in the fridge overnight for a second helping the next day.

German Currywurst

I absolutely love this one! I followed some reviewers suggestions of using Ketchup instead of tomato sauce, and to cut down on the amount of that as well. I still end up with a TON of extra sauce. I have a tendency to put too much Curry on it, but when I make it just for me it's no big deal. I have made it for others as well, and they thought it was a real treat, and something a little different for a household more used to using Old Bay than Curry!

Stuffed Kielbasa

I have made this many, many nights with some slight preference changes. I don't like sauerkraut or instant potatoes. The sauerkraut was eliminated completely. I made mashed sweet potatoes instead. I used a shredded Colby Jack, since that was the shredded cheese I had on hand. One time between grocery store visits, I even used just some sliced Munster cheese, since that's what I had. It's great every time!

Snickerdoodle Cake I

This is a fabulous and easy recipe! Amazing how much it really does taste like a Snickerdoodle! We made them into Cupcakes (myself and 3 children, ages 7, 11, 13). Like others, we used butter instead of shortening, and added 1tsp. of Vanilla and also added 1/2 - 1tsp of Cinnamon to the batter. The batter is pretty dense when mixed, but it doesn't bake dense at all. We baked it for 25 minutes for the cupcakes, was absolutely perfect amount of time. I made them again the next night, and also made mini cupcakes, 20 minutes was perfect for those. We topped them with a light Cinnamon Butter cream Frosting, which added that extra taste of cinnamon. The 2nd day I made them, I took them into work, and everyone was raving over them! (one person went back 4 times throughout the day!)
