Black Bean and Corn Salad II

Reviewed: Feb. 11, 2010
EXCELLENT FLAVOR! Thank you so much for this recipe. There was an extra step I did that I think makes a difference in salsa. I cut up the tomato, put it in a bowl, salted it, and let it sit for a few hours to draw out the extra liquid. Then I went ahead and followed the recipe. Awesome, especially after it sits overnight.

Cantina Pinto Beans

Reviewed: Feb. 8, 2010
We had this with BBQ ribs, and the nice thing about it is the flavor was mild so it did not compete. However, I gave it 3 stars because the recipe as is, is bland. Good recipe, but not special.

BBQ Chicken Pizza

Reviewed: Jul. 17, 2009
I've never had barbequed pizza before, and it was only at the suggestion of my husband that we make it. But I have to say this recipe was amazing. We followed it exactly and used the "Quick and Easy Pizza Crust" on the site. We also used Kraft Hickory BBQ sauce. I've never had pepperoncini peppers cooked on a pizza, but I will do it from now on, it was sooooo good. This pizza was to die for. Thank you so much for this recipe, it will become a regular in our house.

Catfish Tuscany

Reviewed: Jun. 27, 2009
This recipe is delicious! Really it is universal, it could be used on almost any type of fish. We had red snapper, and it was great. Because the fillets were so thick, I broiled each side first, then added the mayo/parm/butter mixture. I sliced the romas paper thin, and lightly salted and peppered them before the final broil. Thanks for the wonderful recipe, it will become a regular in our house.

Moussaka

Reviewed: Jun. 27, 2009
This recipe was amazing, better than any moussaka I've had in any restaurant. The traditional way to make it would be to use lamb, but I don't particularly care for lamb, so using beef was just fine by me. This recipe was perfect, however I did add mozzarella to each layer, for a total of 2 cups. I also had fresh tomatoes from the garden, so I made my own tomato sauce to mix with the beef instead of canned, which I think makes a huge difference. My husband was in heaven while eating this, and asked if I can make it regularly. Thanks for the great recipe!

Sausage and Sauerkraut Casserole

Reviewed: May 20, 2009
I made this exactly as the recipe directed. It was edible, but was nothing to speak of. I had to heat up other left-overs for my kids. Sorry for the low rating, but I will not make this again.

Southern Fried Cabbage

Reviewed: Apr. 13, 2009
This was great, especially with cornbread on the side. I made exactly as is, except I left out the 1/3 cup of oil, but drizzled a little olive oil in as needed. I will definitely make this again, especially with a garden full of cabbage about to be ready to pick!

Salmon Steaks with Dill Sauce

Reviewed: Feb. 12, 2009
I have only made the sauce from this recipe, and we put it over the fish that we make. The sauce is excellent, and my family asks for this meal all the time.

Tuna Noodle Casserole from Scratch

Reviewed: Jan. 22, 2009
My family really loved this. Only thing different was that I did not have mushrooms so I left those out, and I did not have egg noodles so I used pasta sea shells. Turned out really good! I love recipes that are completely from scratch instead condensed soupas a crutch. Thanks for this great recipe.

Home Style Macaroni and Cheese

Reviewed: Jan. 22, 2009
Wonderful recipe, very creamy, though I did not care for the twang that came from the mustard so I will leave that out next time. Otherwise, great. Also I added some french fried onions to the macaroni mixture and bread crumb mixture. I think it really added character to it.

Home-Style Scalloped Potatoes

Reviewed: Jan. 22, 2009
These were really great, my family asked as we were eating it when I could make it again. I prepared the recipe exactly, but next time I will have to add more salt, the recipe did not call for enough. Definitely a keeper!

Made exactly as the recipe states, I thought it was a little bland, though it had a good texture. Very good sauce.

Bread and Butter Pickles II

Reviewed: Dec. 29, 2008
These were the best pickles I ever had. I made 24 jars and now am on my last jar because I keep giving them to friends requesting them, and it is still winter! I can't wait till it is warm enough again to grow more cucumbers, just so I can make these!!! I will make many more jars this time. There were just 2 differences from the recipe that I had to adjust. I only had regular cucumbers, but these worked alright. (I have already ordered seeds for pickling cucumbers next year!) I'm sure that pickling cucumbers would have been better, I will remedy that next year. The other difference was that I did a hot water bath because I wanted to make sure they were sealed and no bacteria would grow. They still tasted very good. Love this recipe, thanks a million for sharing!

Mexican Rice

Reviewed: Dec. 23, 2008
Another family favorite from Allrecipes! I do this a little differently after making it a few times though. I've found that the rice does not cook through and tends to be crunchy when following the recipe. So I combine everything and cook according to the recipe, EXCEPT for the rice and cheese. I cook the rice separately and add it to the cooked mixture. I put it in a baking dish and bake for about 20 minutes at about 350. Then we serve it and put the cheese on top of each serving. You can also put the cheese on top of the casserole during the last couple minutes of baking.

Spooky Witches' Fingers

Reviewed: Dec. 23, 2008
The flavor on these was great, and they were pretty awful to look at! We all went to work with toothpicks making indentions and shaping just like real fingers. The only thing to keep in mind is that these will at least double in size when cooking, so you must make them thin when forming. Unfortunately this was a mistake we made, but otherwise great recipe and a great idea!

Candied Chicken Breasts

Reviewed: Dec. 23, 2008
My family loved this, and is a great alternative to vinegary sweet & sour chicken. The only suggestion I would make is to flatten the chicken breast before cooking by lightly punding or rolling with a rolling pin, otherwise, wonderful recipe!

Sorta Salisbury Steak

Reviewed: Dec. 23, 2008
I made this recipe exactly as is, and my family raved and asked (as they were eating it) when they could have it again!!! When preparing the steaks, I salt and peppered each side before I floured and fried. It similar to chicken fried steak how it is floured and fried, but a great alternative to the white gravy. Plus if you cook it for as long as the recipe says, it comes out really tender. A pot of mashed potatoes is just the thing to go with it. Another family favorite, thank you!
