Easy Apple Spice Cake

made this tonight. Wanted to follow the recipe, but decided to use a can ofLas Palmas green enchilada sauce instead of cooking the tomatillos. Also, added some packaged mexican cheese blend along with the fresh queso. It came out awesome and has earned a place in my kitchen as a regular weekly meal option.

Apple Cake III

the easiest recipe. Cake was fluffy and light, topping was just right. Although I used a 2 oz bag of chopped pecans because I'm not a nut lover.

Chocolate Eclair Dessert

made this a few times for last minute potlucks and it was a big hit! quick easy and delicious. Instead of frosting I used a jar of Mrs Richardsons hot fudge for extra richness.

Zippy Summer Shrimp

fast and easy. I used a lot less lemon juice than the recipe asked for, probably about 4 Tablespoons or so. I also added a lot more salt than I usually use. When the lemon juice is added to the butter and oil it makes a very nice sauce. I served over steamed rice with broccoli and poured the sauce over all. We also ate thai hot chili garlic sauce with it. A very adaptable recipe I'll use again

Easy Alfredo Sauce I

made this last night at the suggestion of a co-worker and was going to post it. The only difference is I used 2 sticks of butter(can never have too much butter), and added pepper. The sauce was so yummy and super easy! we drenched grilled chicken breasts, fettucine, and steamed broccoli and cauliflower with it for a 30 minute meal that was fabulous!

Pumpkin Bread

I've been baking this recipe for 3+ years but realized I never added my rating. I do use only 2 cups sugar, omit cloves, and add 1 tsp ground ginger. If you love pumpkin bread without nuts this one is a hit.

Artichoke Dip I

made this for the first time this Thanksgiving, everyone loved it and my mom said " You can just make this from now on" I found the recipe very simple. I was told I would be bringing this to super bowl 2009 so I double the recipe and it was devoured almost immediately!

Eclair Cake

I had to make a fast, but yummy dessert last new years day. I checked this website using quick no bake desserts. EVERYONE loved this easy recipe. I love it because its so quick and easy. I ended up making it 3 more times this year. I didn't use frosting for the chocolate I used hot fudge, heated up made it easy to pour over top.
