Very simple, quick, and tasty. My husband and teenage stepson ate every last bite (which gave me no leftovers for lunch - bummer!). I did use more garlic than called for (3-4 tsp) because we love garlic. I also added about a tsp of Sriracha to the oil/garlic mix, because we love spicy, too - next time (and there WILL be one) I will use even more. The "shake-and-bake" method did work the best for coating the chicken. I had shredded parm, so it didn't really stick to the chicken, but I sprinkled it on top and it made a delicious crust. I used Italian bread crumbs and added paprika. Baked at 400 for 20-25 minutes and it was crispy outside and tender inside. I paired this with fresh roasted green beans sprinked with lemon juice and sea salt, and whole wheat pasta dressed with a little butter and sun-dried tomato pesto. YUM!
