About this Cook
I'm a SAHM to a teen step-daughter and my baby. I suffer from a yarn addiction. I’m married to the most wonderful man a girl could hope for.
My favorite things to cook
Cookies, crepes, cakes, puff pastries, individual desserts, salads of all kinds.
My favorite family cooking traditions
My grandmother (my dad's mom) used to send my dad pfeffernusse cookies for Christmas every year, but in 2010, she lost a long battle with cancer. While pregnant with my first baby that same year, I secretly got grandma's recipe from my mom and baked these cookies and gave them to my dad for Christmas as a gift. He opened them in front of the whole family during gift time and just started crying. He hugged me tight and said, "I was thinking about these cookies and how I wasn't going to get any for Christmas anymore. Thank you!" I plan to make these cookies every Christmas now.
My cooking triumphs
I once made mini eclairs for (I think) 20 guests for a super bowl party at my parent's. It took me four hours... man did my back and feet hurt! It was worth it though... they went fast and mom gave me a little back rub for my troubles! For my fiance's birthdays and Father's Day I've made homemade chicken salad (his fav now) and melon salad with honey lime syrup, breakfast pizza with eggs, cheese and bacon. Other random successes include sweet and sour chicken, broccoli salad, cold spaghetti salad and cake mix cookies.
My cooking tragedies
Lots of burnt cookies, dry eggs and doughy pancakes. =(

Apple Pie I
Simple and good recipe! I also used 2 Tbsp lemon juice and 2 Tbsp flour. And I too mixed everything for the filling together then poured into the crust.

Amish White Bread
This recipe is so easy and cheap! Very few ingredients! I love that it uses oil instead of butter because I always have oil. It's a great soft bread. I always use all purpose flour and it's great! The bread is ever so slightly chewy, but nice and soft. Good sandwich bread... or anything bread, really. I always let mine cool enough to handle, then put it in a sealed plastic container to keep the crust moist as it cools, then I store it in same container or a ziplock bag or an washed bread bag with a twist tie. So, I don't know how the crust is naturally. I also have to bake mine on the bottom rack. The middle makes the top too brown. Today I used this recipe to make cinnamon swirl bread. I just rolled out the dough after the first rise to put on butter, cinnamon and sugar, then rolled it back up into a loaf and did the second rise. Really easy modification. Made two loaves and gave one to the three college students living above us. They were so excited! It’s delicious!

Two Ingredient Pumpkin Cake
I love simple things like this! Spice cake is very hard to find around her during the holidays (October to December). The stores can't keep it stocked. So, I used a yellow cake mix, cinnamon and allspice to taste.
