Spinach and Mushroom Frittata

I had some fresh beet leaves so I replaced the spinache with this. I used 6 eggs and substituted the scallions with a small onion from my garden. I didn't have ricotta on hand so I eliminated it. This was so flavourful I can only imagine how good it would have been if I followed the ingredients to a T.

Korean BBQ Short Ribs (Gal-Bi)

I made this receipe and modified it quite a bit. I used the exact ingredients called for, except what I did completely different was I soaked the meat in cold water to take out the impurities, I did this for about 45 min., then I boiled the ribs for 2 hours. I added some garlic from the jar to increase the flavour. (For 3 people I used 7 very meaty beef ribs.) At the 2 hour mark you can tell the ribs are starting to soften up. I then transferred the meat to a casserole dish and poured the mixture of it. I cooked it at 400 degrees for 1 hour in the oven. It was so flavorful and tender. The meat fell right off the bone! These are by far the best beef ribs I've ever made!

Cheesy Leek Strata

I served this for Christmas Day brunch, it was a hit. I had 9 people over and it could have easily feed 12 as we also had sausages & fruit. The only thing I would do differently is omit the beer as I found you could really taste it, I would substitute it with half & half. I would also add more cheese.
