Parmesan Crusted Chicken Strips

Easy. Excellent. Quick. Only change I made was that I added some dried basil, oregano, and garlic powder to the parmesan cheese breading.

Flourless Chocolate Cake I

This was amazing! I sprayed a springform pan with olive oil and placed the water bath in the oven with it (but the pan itself wouldn't fit in the water bath). The cake was AMAZING! Rich, fudgey, and perfect. Served with raspberry sauce and homemade whipped cream (both recipes from this site, too).

Chicken Enchiladas II

Great base recipe. Following the suggestion of others, I added a few more spices: cumin, smoked paprika, and a dash of cayenne. I also didn't have any green chiles on hand, so I used half a can of chipotle peppers instead, which made it VERY spicy. Yum!

Roasted and Curried Butternut Squash Soup

Used coconut milk instead of yogurt, used 4 cups veg broth instead of 6, and upped the curry powder to taste (doubled or tripled, probably). Very good! Will definitely make again and again. And do roast the veggies first - it makes the flavors much better!

Curried Coconut Chicken

Easy and fantastic. Followed another reviewers advice to cook the oil + curry spices together for about 5 mins before adding the onions and garlic. Also would recommend simmering without the lid for a better consistency. (I did it with the lid on for half and off for half and it was a little liquidy for my preferences.)

Chewy Granola Bars

Excellent base recipe - lots of room for variation! If you're having trouble with it being too crumbly, make sure you are using regular rolled oats and not quick oats. I had to sub quick oats for a second batch because I ran out of the regular kind, and they did not hold together nearly as well.

Crab Cakes II

After reading all of the rave reviews, I was a little disappointed with these crab cakes. They just weren't all that spectacular to me. To solve problem of them falling apart, I added additional crumbs into the crab/egg/mayo mixture until it reached a texture that would hold. I then gave the formed balls a quick roll in the crumbs to give the outside layer a good coating before frying them. Other than that, I made it as is. Just okay.

Sloppy Joes II

My husband has been looking for a sloppy joe recipe that's like his mom's, and I think we found it! We doubled the sauce ingredients in order to make it truly "sloppy." Great recipe!

Bar-B-Q Baked Beans

Great baked beans recipe. No need to buy the canned stuff anymore! I substituted maple syrup for the molasses and added an extra spoon of brown sugar. I also omitted the bacon. Still yummy!

Slow Cooker Chicken Taco Soup

This was easy and amazing! The leftovers were all gone by the next day. Following other reviewers, I omitted the beer (didn't have any on hand and don't care for it anyhow) and added more seasoning toward the end (cumin, garlic powder, cayenne pepper, black pepper all "to taste"). Huge hit with me and my skeptical husband!

Taco Rice

I made some changes based on other reviews, and was very happy with the result! I used long grain rice (not instant) because it was all I had, and simply adjusted the cooking time accordingly. I used only half the packet of taco seasoning. I omitted the olives and added refried beans instead (was going to do black beans but didn't have 'em). The end result was very tasty. It still had enough spice to be good, and was a little more substantial than rice alone wouldn't been. I will definitely make this again!
