Blueberry Cream Muffins

My niece says it is the best muffin she has ever had. Great consistency and taste. I used mostly brown sugar (because that is what I had), half white and half wheat flour, half sour cream and half vanilla yogurt. The yogurt added some sweet. I think I would reduce the sugar by 1/4 to 1/2 cup with the yogurt and leave it same without. Plenty sweet for breakfast without incre the sugar.

Blueberry Buttermilk Coffeecake

I was in a rush so didn't use the beaters at all. Melted the butter and stirred in the sugar. Handbeat the eggs and put them both in. Used about 2/3 buttermilk and 1/3 regular milk. All turned out well. Very tasty and I hear the folks raved about it at the breakfast I sent it to.

White Texas Sheet Cake

Strawberry Cake from Scratch

My guests raved and I might sneak a piece for breakfast this a.m. It was amazing! This is one of the best cakes I've ever made. -didn't bother separating the eggs and it was fine -did measure the flour after sifting -did reduce sugar to 1 1/2 cups and it was perfect -used fresh unsweetened strawberries -cooked it in a 11 x 15 pan I made cream cheese frosting (2 lbs cream cheese with 2 packages cream cheese, which was too much frosting, half that would probably be fine). Used more of the strawberry puree to beat frosting to the consistency I wanted. Another time I made it with cherry jello and stirred in half a can of cherry pie filling. The other half can, I beat into 1 lb of powdered sugar and 1 block of cream cheese. This was still more frosting than I needed for an 11x15 pan but would likely be enough for a two-layer cake if spread thinly. Also delicious!

Banana Sour Cream Bread

Made it for my sisters-in-law and they loved it. So did my family. Have wanted more since the last piece was gone. Used half whole-wheat flour. A little yogurt instead of all sour cream since I didn't have full amount.

Buttermilk Pancakes II

I used half wheat flour. Used mostly brown sugar. Had to use vinegar to sour my milk since I didn't have buttermilk. It makes a large batch and I doubled it and got about 35 pancakes.

I think I just need some more practice with how much batter to use, how high to do the heat, flipping them, etc. Probably should have stirred up the batter each time I poured it.

Not too sweet but not lacking in sweet either. The amount of flour in the recipe worked just fine. Was glad for the tip of substituting three gift-sized loaf pans per large one.

Hearty Lentil Soup II

Winner winner, (not) chicken dinner. Ok, I cheated and put chicken sausage in and used chicken broth. Didn't have some things, had others. Used fresh tomatoes and tomato sauce, a bit heavy on the sauce and a bit lighter on the broth. I used less liquid so it was not so soup-like, which is what I wanted. I'm ready to dig in but had to share a rating after my initial tasting.

Banana Blueberry Muffins

Loved these! They are moist and delicious; plenty flavorful perhaps because of a couple tweaks. I'll make these again for company or to take to a brunch. Used 1/2 cup brown sugar (not packed), 1 generous tsp of cinnamon, 2 whole eggs, half whole wheat/half white flour. Didn't have quite enough banana so supplemented with adding 1/4 c applesauce. Added some granola mixed with cinnamon to top per another suggestion.

Gingered Carrot Soup

I'll make it again. Next time I'll add sweet potatoes or apples to give it a little sweeter flavor and I'll puree it longer (I still had some little bits, would have liked it more smoothed out.) The carrots I used may have been a little old or something b/c the soup tasted kind of bitter. I added some orange juice and cinnamon and that helped. The comments about using the amount of broth mentioned in the directions as opposed to the amount in the ingredient list were helpful. I also used about half as much ginger and it still had plenty of ginger taste.

Cranberry and Cilantro Quinoa Salad

Cooked the quinoa in chicken stock for a richer flavor. Added a bit of lemon juice with the lime because I had it. Used frozen cilantro cubes because that's what I had. Everyone RAVED about it and asked me to bring it again to the next potluck. I'm glad I made a double recipe of it. Oh, also, I served it hot because I didn't have time for the quinoa to cool. Since I did that, I sauteed the veggies in a bit of olive oil. I put the veggies in with the quinoa and then the lime juice and curry. Toasted almonds on top just before serving.

Impossible Pumpkin Pie II

Kids and I made it together using pumpkin we grew. It was a lot of fun. Not as sweet as traditional pumpkin pie but that also made it kind of refreshing, especially topped with unsweetened real whipped cream.

Valentino's Pizza Crust

This is my go to pizza recipe. I use about 1/3 white and 2/3 white wheat flour. One time I goofed and put the yeast in the flour instead of dissolving it in the water. Just kept going and it all turned out fine.

One Bowl Chocolate Cake III

Turned out great. Loved how easy it was to put everything in one bowl. I took a tip to up the cocoa to 1 cup and it tastes great. Did mine in 9x13 pan for 35-40 min. and cupcakes for 15-20 min. Also made one with cocoa as called for, 1 cup of the flour was whole wheat, and substituted apple sauce for oil. This healthier version was also tasty; a little different but tasty nonetheless.

Crustless Spinach Quiche

Quiche with crust can taste so heavy if the crust is real flaky and buttery. So I loved this without the crust. I used fresh spinach (about half a bag I think), couple cloves of garlic, diced bell pepper, shredded zucchini. Sauteed all of that with the onion. Then to the egg/cheese mix, I added pepperoni. It was great!
