Oregano-Lemon Chicken

Oh my goodness!! This was delicious. I didn't bake it. I used the ingredients as a marinade and marinated the chicken pieces for about 8 hours. I also added a small amount of black pepper and a dash of salt. I heated a skillet and browned the chicken on both sides adding a little marinade as it would become dryer. I did not need to add additional oil or butter to the pan. They honey gave it a nice caramelized glaze. My husband loved it. I am making this again tomorrow night!

Butterscotch Pudding I

This is very good. I took advice of some other reviewers and only used 2 TBS cornstarch and I browned the butter before adding it. I mixed the cornstarch thoroughly with the brown sugar, and had no lumps.

Sea Salt Caramel Brownies

Well I did this all wrong and even dropped the pan when removing from the oven. They slid to one end so I had to spread it back out across the pan. I lost a little to the floor. What was left was still delicious. Maybe mixing them up after baking is the key!! Now getting it off the floor was a different story!!

Buttermilk Pie

I made this for the second time and used a deep dish piecrust. I had to bake it much longer, but once again, it was delicious. I took it to a church potluck and had none left over :(

Grandmother's Carrot Casserole

This was very good. I did cut the sugar in half and it was very sweet. I sauteed the onions in 2 Tbs. of butter then added to the drained carrots. I also added more buttered cracker crumbs on top. Would make it again.

Quick Black Forest Cake

According to my husband this is a very good cake. I don't like cherries with chocolate so I can only go by what he says. I did add 1/2 cup of vegetable oil for extra moisture and baked it in a bundt pan. I used Duncan Hines icing and heated it in the microwave and pour it over the cake. It gave it a beautiful glaze. I used Pillsbury devils food cake mix with pudding. He thought it was great.

Potato Leek Soup III

This soup was excellent. I had never used leeks in anything before, and found out that I liked them. I did use half and half just to cut the fat a little. The second time I made this, I used white onions instead of the leeks. Still very delicious. Today I am making it again with the leeks. This has now replaced my previous favorite potato soup. Family loves it too!

Braised Balsamic Chicken

This was very easy and very tasty. Husband liked it also. We both love balsalmic vinegar and this is fairly heavey on the vinegar. If you are not a fan of vinegar, I suggest cutting back a little. Will definately be making this again. Thanks!

Pecan Coconut Pie

This pie was WONDERFUL. I did add some chocolate ships. I had to bake the pie MUCH longer than the recipe calls for. Also you should use a deep dish pie shell.

Bacon Crackers

These were wonderful. Made them for a Christmas gathering. No one could stop eating them. Good thing I made a bunch! I did turn the heat up to 350 for about 10 more minutes just to make them crispy. They were perfect. I used Ritz crackers and just folded the bacon pieces to fit. I used plenty of the brown sugar. I also lined my baking pan with foil for quick clean up. I even made several for myself one evening while my husband had a board meeting. It was a great supper :)

Made this for a Christmas get together. Everyone loved it. The only thing I changed was that I rolled it in chopped pecans instead of walnuts as I am allergic to them.

French Onion Soup Gratinee

This soup was awesome! Hubby thought it was great. Was a little too salty for me. Probably will use low sodium broth (either chicken or beef) next time. Only had swiss (Baby Swiss) on hand and just the dried herbs. Got a little carried away with the balsalmic vinegar. Still was wonderful. Didn't have red wine on hand so I threw in a little white wine. If you get the bread nice and brown, the edges remain crunchy. Will be making this often. Best French Onion Soup we have ever had! Thanks!
